Sweet Potato Casserole

Baked sweet potatoes with brown sugar and pecans.

Ingredients:

  • 3 cups cooked mashed sweet potatoes
  • 2 eggs beaten
  • 1 cup white sugar
  • 1 cup firmly packed brown sugar
  • 1 Tbsp. vanilla
  • 1/2 cup flour
  • 3 cups chopped pecans
  • 1 stick of oleo softened
  • 1/3 cup oleo softened

Directions:

Beat mashed sweet potatoes with white sugar, 1 stick of oleo, vanilla and eggs.

Place in greased 9 x 13 inch baking dish or casserole dish. I prefer the 9x13 inch dish because it makes it a bit thinner.

Mix brown sugar, 1/3 cup oleo, flour and nuts with your fingers. Place this on the top of the sweet potato mixture and bake in the oven at 350 degrees F for 1 hour.

Sweet Potato Casserole

This yummy casserole is always asked for, especially at holiday times and cook outs. Kids seem to love the marshmallow topping. It calls for whole yams or sweet potatoes, but we have also used canned.

Ingredients:

  • 3 cups mashed sweet potatoes
  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

Topping Option 1:

  • 1 cup brown sugar
  • 1/2 stick butter
  • 1/3 cup flour
  • 1/2 to 1 cup chopped pecans

Topping Option 2:

  • 1 can crushed pineapple
  • 1 cup miniature marshmallows

Directions:

Preheat oven to 350 degrees F.

Boil the potatoes whole until tender. Remove and let cool completely. After the potatoes are cooled, put them in a large bowl and mash them as you would regular potatoes. Add the rest of the ingredients. Pour into a large buttered baking dish.

Cover the potatoes with the topping of your choice. If using topping 1, mix ingredients. If using topping 2, top potatoes with pineapple, then marshmallows.

Bake at 350 degrees F for 35 minutes.

Reba McEntire's Praline Sweet Potato Casserole

Ingredients

  • 1 can (40 oz) sweet potatoes, drained
  • 1/3 cup granulated sugar
  • 2 Tbsp. margarine, melted
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 2 large eggs
Topping:
  • 3/4 cup packed brown sugar
  • 1/4 cup pecans, chopped
  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. margarine, melted

Directions

Preheat oven to 350 degrees F. Grease shallow 1 1/2 qt. casserole. In bowl, mash sweet potatoes; stir in granulated sugar, margarine, vanilla, cinnamon, salt, and eggs. Mix topping ingredients; sprinkle on potato mixture. Bake 30 minutes. Serves 6.

Sweet Potato Fluff

This is a favorite of my oldest daughter. She loves anything to do with sweet potatoes and the sweeter the flavor of the recipe, the more she likes it.

Orange Sweet Potato

Ingredients:

  • 2 (16 oz.) cans sweet potato (drained)
  • vegetable oil spray
  • 1/2 cup orange juice
  • 2 Tbsp. light brown sugar
  • 1/4 tsp. cinnamon

Directions:

Preheat oven to 350 F. Lightly spray casserole dish with vegetable oil.

In a large mixing bowl mix all the ingredients together. Spread the mixture in the large casserole dish.

Bake, covered for 25 minutes.

Servings: 6-8
Prep Time: 15 Minutes
Cooking Time: 25 Minutes

Mashed Sweet Potato Casserole

Great traditional Thanksgiving and Christmas recipe.

Ingredients:

  • 3 cups mashed sweet potatoes
  • 3/4 cup white sugar
  • 2 eggs
  • 1/3 cup melted butter
  • vanilla
  • 1/2 cup half and half
  • 1/2 tsp. salt

Topping:

  • 3/4 cup brown sugar
  • 1/4 cup margarine
  • 1/3 cup flour
  • 3/4 cup nuts

Directions:

Mix first 7 ingredients. Place in casserole. Mix topping and place on top. Bake at 350 degrees F for 30-35 minutes.

Candied Sweet Potatoes

This is a favorite of my husband and was also a favorite of my dad.

Ingredients:

  • 2-3 lbs. cooked sweet potatoes
  • 3 Tbsp. flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup margarine
  • 1/4 cup evaporated milk
  • 1/2 cup chopped pecans

Directions:

Place cooked sweet potatoes in greased baking dish. Melt margarine. Combine sugar, flour and add to margarine. Stir in evaporated milk and bring to a boil. Pour over sweet potatoes. Sprinkle with nuts. Bake at 400 degrees F for 30 minutes.

Servings: 10-12
Prep Time: 15-20 Minutes
Cooking Time: 30 Minutes

Sweet Potato And Carrot Casserole

Ingredients

  • 1 lb. sweet potatoes peeled , washed and diced
  • 1 lb. carrots peeled, washed and thinly sliced
  • 10 oz can of drained pineapples
  • 1/2 cup of raisins
  • 1/3 cup packed brown sugar
  • 2 Tbsp. of orange juice
  • 1 Tbsp. of butter
  • 1 Tbsp. of molasses
  • 1 1/2 tsp. cinnamon
  • 3 Tbsp. of chopped pecans

Directions

Boil both veggies (about 7 minutes) until tender. Drain and add in pineapples and raisins, toss. Place into a casserole dish. In a pan, combine remainder except pecans and heat until it forms a syrup. Pour over veggies and sprinkle with pecans. Bake for 15 minutes at 350 degrees F.

Sweet Potato Surprise

My husband and kids love this recipe!

Ingredients:

  • 1 large can sweet potatoes
  • 1 large can apricots, drained
  • 1 cup apricot juice
  • 1 1/2 Tbsp. cornstarch
  • 1 1/4 cup brown sugar
  • 1/8 tsp. cinnamon
  • 2 Tbsp. butter
  • 1/2 cup chopped nuts

Directions:

Arrange sweet potatoes and apricots in a 1 1/2 qt. buttered baking dish. Combine juice, cornstarch, brown sugar, cinnamon and butter in saucepan. Cook until thick, stirring constantly. Pour over potatoes and sprinkle with pecans. Bake at 375 degrees F for 30 minutes.

Servings: 8
Prep Time: 15-20 Minutes
Cooking Time: 30 Minutes

Cranberry Sweet Potato Bake

This is a really easy recipe that uses a small amount of ingredients, is delicious, formal, and loved by kids.

Ingredients:

  • 2 cans (15 oz. each) cut sweet potatoes, drained
  • 1 cup fresh or frozen cranberries
  • 1/4 cup pecans, coarsely chopped
  • 1/2 cup orange marmalade, warmed

Directions:

Place sweet potatoes in a greased 11x2 in. baking dish. Sprinkle with cranberries and pecans; spoon marmalade over top. Cover and bake at 350 degrees F for 20-30 minutes or until heated through. Makes 4-6 servings.

Sweet Potato Casserole

This is a great Thanksgiving favorite of our family.

Approximate Time: 40 minutes

Yield: 8

Ingredients:

  • 1 tsp vanilla
  • 3 cups sweet potatoes, cooked and mashed ($2.49)
  • 1 cup sugar ($.50)
  • 1/2 cup margarine ($.25)
  • 2 eggs
  • 1/3 cup milk
  • 1/2 cup flour
  • 1 cup brown sugar ($.35)
  • 1/2 cup milk
  • 1 cup nuts ($1.50)

Steps:

  1. Cook and mash potatoes.
  2. Add sugar, margarine, eggs, vanilla, and milk. Put in a casserole dish.
  3. Mix brown sugar, flour, milk, and nuts. Sprinkle over top.
  4. Bake 25 minutes at 350 degrees F.

    • 1/3 cup flour
    • 2 tablespoons butter, softened
    • 1/2 cup chopped pecans
    PREPARATION:

    Beat eggs, granulated sugar, and 3/4 cup butter. Add milk and vanilla. Combine with the mashed sweet potatoes; spoon into a greased 2-quart casserole. Combine brown sugar, flour, 2 tablespoons softened butter, and pecans, mixing until crumbly; sprinkle over sweet potatoes. Bake at 350 degrees F for 45 minutes. Serves 6. (04/02/2009)

    Yummy Sweet Potato Casserole

    Ingredients:

    • 3 cups sweet potatoes (mashed)
    • 1 cup sugar or sweetener
    • 1 egg
    • 1/2 tsp. salt
    • 1/4 cup margarine
    • 1 cup milk
    • 1/2 tsp. vanilla

    Topping:

    • 1 cup brown sugar (packed)
    • 1/4 cup margarine
    • 1/2 tsp. vanilla
    • 1 cup pecans (chopped)
    • 1/2 cup all purpose flour

    Directions:

    Mix 1st 7 ingredients. Pour into a Pyrex baking dish. Mix last 5 ingredients in a separate mixing bowl & spread over potato mixture. Bake at 350 degrees F for 30 minutes.

    Hi, I thought I would write to say I have this recipe, only mine calls for walnuts. I think pecans would be a great change. whenever I take this casserole somewhere, I am always asked for the recipe!     Candied Sweet Potato Casserole

    Ingredients

    • 2 cups sweet potato, cooked (can use canned)
    • 2 eggs, beaten
    • 1 cup sugar
    • 4 Tbsp. butter or margarine
    • 2/3 cup milk
    • 1/2 tsp. nutmeg
    • 1/2 tsp. cinnamon

    Directions

    Mash sweet potatoes. Mix in other ingredients. Microwave 10 minutes or till thick as pumpkin pie, stirring twice. Then top with topping.

    Topping:

    Ingredients

    • 1 cup crushed Rice Krispies
    • 6 Tbsp. butter or margarine
    • 1/2 cup pecans
    • 1/2 cup brown sugar

    Directions

    Melt butter and mix in other ingredients. Spread over potatoes. Microwave 6 minutes or till nicely browned.

    Sweet Potato Casserole

    Ingredients

    • 4 cups hot, mashed sweet potatoes
    • 1/2 cup orange juice
    • 1/4 cup butter (melted)
    • 1/2 tsp. salt
    • 1 cup miniature marshmallows

    Directions

    Beat potatoes until smooth, add orange juice, salt, melted butter and marshmallows. Mix well, put in casserole dish and spread top with marshmallows. Bake in a 350 degree oven for 30 minutes. This recipe tastes even better after the next day - that is if there is any left over.

    My daughter made this about 4 years ago, I just loved it. Now we have this every Thanksgiving. It is worth trying. I just want to add that the way I cook the sweet potatoes is in the Microwave, poke a few holes and back as you would a reg potato. When cool, peel and mash. Diana (07/08/2008)
