Loaves And Fishes Casserole

This makes a great pie type casserole. The 'crust' is outstanding!

Ingredients:

  • 4 cups soft bread cubes
  • 2 Tbsp. onion, minced
  • 1/2 tsp. celery salt
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. sage
  • 1/4 cup margarine, melted
Filling:
  • 6 Tbsp. margarine
  • 6 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. celery salt
  • 2 cups milk
  • 2 cups flaked fish
  • 1 cup corn flakes

Directions:

Combine first 7 ingredients for crust. Press into baking dish. Bake at 375 degrees F for 15 minutes.

For filling: Melt margarine; stir in flour and seasonings. Add milk gradually, stirring until thickened. Add fish and cereal. Pour into baked crust. Bake at 425 degrees F for 10 minutes.

Servings: 6
Prep Time: 20-30 Minutes
Cooking Time: 25 Minutes

Tuna Fish Casserole

Ingredients

  • 3/4 cup uncooked noodles
  • 1 3/4 cups milk
  • 2 Tbsp. butter
  • 1/4 cup flour
  • 1/2 tsp. salt
  • 1 cup flaked tuna
  • 1 or 2 hard-boiled eggs, chopped
  • bread crumbs

Directions

Cook noodles in boiling salted water and drain. Make a white sauce of butter, flour and milk. Add chopped eggs, fish and seasonings. Pour into buttered baking dish. Bake in 400 degree F oven for 15-20 minutes.

Fish Casserole

Ingredients

  • 1 can cream of mushroom soup
  • 2 oz. mild cheese
  • 3 eggs, separated
  • 2 cup soft bread crumbs
  • 1 1/2 cups flaked cooked fish (like bass, halibut, flounder, trout, pike, etc.)

Directions

Put soup into a saucepan. Add cheese and heat until it has melted. Stir in one egg yolk at a time and mix thoroughly. Remove from fire and add the soft bread crumbs and fish. When cool, fold in the beaten egg whites. Pour into buttered casserole and bake about 50 minutes in a moderate 350 degree F oven. Makes 6 servings.
