My husband's favorite meal.
Saute ground meat and drain fat. Mix with spaghetti sauce; mix together sour cream, mozzarella cheese and spread cheese mixture on top of meat mixture.
Zucchini and Carrot Rotini Lasagna
A Healthy Lasagna that tastes amazing! This is comfort food without the guilt. Brown meat with garlic, onion, and celery. Add tomatoes and paste, along with the zucchini and carrots. Add spices of your choice to flavor.
Cook noodles following directions; drain and spoon into a greased 8x11 pan. Brown meat with onions if so desired. Spread cottage cheese over noodles; break up ground beef and spread over top.
Brown hamburger, onion and green pepper in large pan. Drain off fat. Cook noodles in boiling salted water for 3 minutes, drain, and rinse with cold water.
For sauce: In a large non-stick skillet, heat oil. Add meat and garlic; saute until meat loses its pink color. Stir in remaining ingredients, except sweetener, zucchini and cheeses.
I like this because it is somewhat healthier than if you use pasta and very good. Spray bottom of casserole with cooking spray. Add a little spaghetti sauce to it.
