Here is a way to use some of that left over Easter ham.
Ingredients:
1/2 lb. ground beef
1 1/2 lb. ground ham
1 cup bread crumbs
1 cup milk
2 eggs
Sauce
1 1/2 cup brown sugar
1/2 cup vinegar
1/2 cup water
2 tsp. dry mustard
Directions:
Feel free to vary the meat amounts. Mix and shape into 1 1/2 inch balls. Place in greased oven pan and make the sauce to put over them. Pour the sauce over the meatballs. Bake 2 hours at 250 degrees F.
This is a great dish that can be very festive and good for Christmas Eve! These are very, very yummy!
Ingredients:
2 1/2 lb. ground ham
2 lb. ground pork
1 lb. ground beef
3 eggs
1 1/2-2 cup milk
3 cup crushed graham crackers
Sauce:
2 cans tomato soup
6 Tbsp. vinegar
2 1/4 cup brown sugar
2 tsp. dry mustard
Directions:
Combine all ingredients; mix well. Use 1/2 cup measure to make approximately 25 balls. Place in a shallow baking dish; cover with sauce ingredients that have also been well mixed. Bake at 325 -350 degrees F for 1 1/2-2 hours.
Mix ham, pork, bread crumbs, eggs, milk and onion all together and form into balls. Bake at 350 degrees F for 45 minutes. While baking baste with a mixture of crushed pineapple, brown sugar, vinegar and mustard. Bake for a total of 1 hour.
Warm milk and mix with crumbs. Mix all of above ingredients well for 5 minutes and form balls. Combine syrup ingredients and pour mixture over balls. Bake, covered, at 300 degrees F for 30 minutes. Turn meat balls and continue baking uncovered 30 minutes. Serve in heated peach halves. Serve the syrup in a gravy boat. Makes 30 balls.
Combine meats, crumbs, egg, milk, chives, and garlic powder. Season with salt and pepper as desired. Form 1 inch diameter meat balls. Place on cooking grill. Cook in microwave on full power for 5 minutes. Combine pineapple and remaining ingredients. Season with salt and pepper as desired. Pour over meat balls in 2 1/2 to 3 qt. casserole. Cover with wax paper; cook in microwave, covered, on full power for 4 minutes or until simmering. Blend together cornstarch and water; add to sauce. Cook in microwave on full power for 3 minutes or until sauce is thickened. Stir halfway through cooking time. Makes 36 appetizers or over rice as main dish.
Combine all ingredients and mix well. Let set 10 minutes. Shape into 20 medium sized balls and place in a shallow baking dish. Bake at 325 degrees F for 45 minutes. Drain excess fat.
Sauce:
In a saucepan heat all ingredients until mixture thickens, about 2 minutes. Pour over ham balls and return them to oven for 15 more minutes.
These have always been a favorite of mine! Very good recipe and also nice because it's pretty simple.

Sauce:
1 cup brown sugar
1/2 cup vinegar
1 1/2 cup water
2 tsp. dry mustard

Combine the meats and mix well. Add egg, crumbs, and milk and mix well. Shape into balls (golf ball size) or small log shapes. Arrange in 9x13 inch pan and bake at 375 F for 30 minutes.
Combine sauce ingredients in pan and bring to boil. Pour over balls and lower temperature to 350 F and bake another 20 minutes. Turn and bake another 20 minutes.
These are great ham balls! A friend of mine gave me the recipe for these several years ago and they quickly became a family favorite. This makes a large amount.

2 1/2 lbs. ground smoked ham
2 lbs. lean pork
1 lb. ground beef
3 beaten eggs
3 cups crushed graham crackers
2 cups milk
2 cans tomato soup
2 tsp. dry mustard
3/4 cup vinegar
2 cups brown sugar
Directions:
Combine first 6 ingredients, and make into 1/3 cup size balls. Place in two 9x13 pans.
Combine soup, mustard, vinegar, and sugar. Pour over meat balls.
Bake at 325 F for 1 1/2 -1 3/4 hours. Baste occasionally.
