Viva La Mexican Mac and Cheese
Preheat oven to 350 degrees F. Cook pasta spirals per package instructions in large pot until al dente. Drain. In a medium saucepan, slightly heat milk over medium heat. Add cheeses and stir until completely melted.
Quick Chicken Enchiladas With Salsa
Boil chicken for 30-45 minutes until done. Cool and shred. In a food processor, combine creamed corn, 1/2 can whole kernel corn, cottage cheese, chili powder, garlic powder, and rehydrated onion flakes.
Brown meat, add chopped onion and cook until tender. Stir in seasoning mix, tomato sauce and chili beans. Simmer 10 minutes. Layer meat sauce, tortillas and shredded cheese into two stacks using 5 tortillas in each.

This has become a family favorite and I always have to make a double recipe. Also sometimes we pour a can of nacho soup over the top before baking.
Combine chicken, 1 cup sour cream, 3/4 cup cheese and the onions and the pepper; mix well. Dip tortillas in hot oil to soften; drain. Top each tortilla with 1/4 cup mixture and sprinkle with cumin; roll up tightly.
Saute' onion and pepper in small amount of margarine in skillet until tender. Soften tortillas over steam from vegetables. Place 1 spoonful soup, 1 spoonful vegetables and 2 spoonfuls cheese in each tortilla. Roll tortillas to enclose filling.
Fry tortillas in hot oil until soft. Drain. Fill center of tortillas with small amount of meat, cheese and onions. Roll and place in greased baking dish.
In a medium-size bowl, pour boiling water over the cornmeal, stir, and let cool 10 minutes. Add milk, canola oil, eggs, cumin, chili powder, and baking powder; beat until smooth. Stir in the corn, chiles and olives.
Combine first 3 ingredients with 1/2 teaspoon salt in bowl, mixing well. Knead on floured board until smooth. Divide into portions and roll out individual fry breads. Fry in hot deep oil until brown. Saute' onions in 1/4 cup oil in skillet.
Crispy Refried Black Bean Tostadas
This recipe gets it's authentic taste from the freshly cooked flour tortillas, and refried black beans. Once you taste this, you'll never want to go back to a taco drive-thru.
Leftover Pork (or Beef) Fajitas
After we've had pork loin or a beef roast for Sunday dinner, we usually have enough left for dinner the next day. I wrap the leftover meat in foil and put in the oven to heat while I prepare the other ingredients for Fajitas.
In skillet, cook beef over medium-high heat until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2-quart shallow baking dish.
Cut tortillas into half moons. Cut pepper jack cheese in half diagonally to form triangles. For easier rolling, microwave tortilla halves for 20 seconds. Microwave chicken strips for 2-3 minutes.
Mix together: 1 lb. hamburger (browned), 1 can refried beans, 1 package taco seasoning . . .
Grease 3 qt. casserole. Cut 6 tortillas into bite-size pieces and place in casserole. Add a layer of chicken, cheese and onion. Top with half of mixture made by combining soups, milk and salsa. Repeat layers and top with grated cheese.
Mix chicken, 1/2 can undiluted soup, chilies, sour cream, and only 1/2 each of cheese. Roll a good portion in each tortilla and secure with a toothpick. Place in 9x13 inch pan, sprayed with non-stick cooking spray.
Pour 1/2 can cream of chicken and 1/2 can of cream of celery into a bowl with the diced onion and 1/2 of the package of shredded cheese. Microwave until it is melted and stir. Mix chicken together with the microwaved portion.
Layer 2 Tbsp. cream cheese, 2 Tbsp. refried beans, sprinkle of tomatoes, shredded cheese, and minced onions. Bake at 350 degrees F for about 20 minutes or freeze for serving later.
Barbecue Beef Taco Plate for a Crowd
In a large container, cook the beef over medium heat until no longer pink; drain. Stir in the taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes.
Brown beef, drain fat. Add onion and green pepper, continue cooking until onion and pepper are soft. Add salt, pepper, Picante sauce, chili powder, cumin, garlic powder, Tabasco and ripe olives.
