Mexican Chicken

Easy, tasty meal with a kick to it. One of our favorites! Preheat oven to 350 degrees F. Place uncooked chicken in the bottom of a 9 x 7 inch or similar size Pyrex dish.

Beef and Salsa Topped Corn Chips

Combine beef, salsa, chiles, and green onions in medium skillet; cook for 5 minutes over medium heat until hot. Place corn chips on dinner plates; top with meat mixture and cheese.

Combine ingredients in a large bowl. Tear tortillas into small pieces and fold into mixture. Pour into greased 9x13 inch pan. Sprinkle top with reserved cheese.

Spicy Mexican Rice (Electric Skillet)

This is a combination of Spanish Rice and Stuffed Peppers. My kids ate everything, but my spousal unit was a picky eater. He didn't like bell peppers and the rest of us loved them. He would eat the filling from the stuffed pepper and leave the 'shell'.

Build Your Own Tacos

It's so much fun to set up this "choose your own ingredients" meal for company and watch the choices and how they build their own tacos. You can make it easier on yourself by simply serving soft shells by heating the corn tortillas in a microwave tortilla warmer instead of frying them ahead in oil.

Brown meat; add taco seasoning as directed on package. Add tomatoes; simmer for 15 minutes. Layer 1 flour tortilla in round casserole dish;. Place taco meat on tortilla and spread to cover.

Black Beans

Rinse beans and drain. Place in large saucepan. Add chicken broth and remaining ingredients. Bring to a boil. Boil for 15 minutes, stirring frequently. Reduce heat.

Boil chicken breasts in water to cover in saucepan until tender. Remove chicken, reserving broth. Bone chicken; cut into bite-size pieces. Saute' onion, garlic, and jalapeno pepper in olive oil in skillet until tender.

Had mango salsa at a friend's house, and have adjusted the recipe to suit us. Love this with chips, on Mexican food, or even as a condiment to grilled meat. A wonderful mix of sweet and spicy.

Fiesta Rice

In a saucepan, heat condensed chicken broth, 1/2 cup water and salsa to a boil. Stir in uncooked Minute Rice. Cover and remove from heat. Let stand 5 minutes.

Chicken Quesadillas

Preheat oven to 425 degrees F. In nonstick skillet, over medium high heat, cook chicken 5 minutes or until done and juices evaporate, stirring often. Add soup and salsa. Heat through.
