I tried this the other day. It's easy and feeds everyone. I have 5 kids at home and it satisfies all. It is inexpensive as well.

Ingredients:

  • 1 lb. cooked pasta
  • 1/2 cup feta cheese crumbled
  • 1/2 small minced onion
  • 4 Tbsp. of chicken broth
  • 10 strips of chopped bacon
  • 1/2 tsp. sugar
  • 2 Tbsp. of sour cream
  • 1 cup whipping cream
  • 3-4 cups tomato sauce
  • salt and pepper to taste

Directions:

Cook bacon and onion in frying pan until brown, drain excess fat. Add chicken broth, tomato sauce. Cover and simmer on low for 10 minutes. Add cream, sugar, sour cream, feta cheese, salt and pepper. Simmer for 3-4 minutes. Serve over cooked pasta.

This is a quick and easy dish that satisfies my cravings for Alfredo-ish creaminess and not-too-hot spiciness. I usually have the ingredients to make this on hand, except for the heavy whipping cream. This recipe is very forgiving regarding amounts of meat and pasta, use amounts to suit your liking. I have also used shrimp in lieu of chicken to make it "extra extra special."

Place chicken & Cajun seasoning in a bowl and toss to coat. In a large skillet over medium heat, sauté chicken in butter until chicken is tender, about 5 minutes.

Reduce heat, then add green onion, heavy cream, dried tomatoes, basil, salt, garlic powder and black pepper. Heat through. Add cheese and stir until slightly thickened. Toss with hot noodles.

This is easy and fast. Everyone likes it too.

Ingredients:

  • 1 lb. bow tie pasta
  • 1 1/2 cups of peas
  • 1 cup diced onion
  • 8 oz. tub mascarpone cheese, or whatever you choose
  • Ad
  • 12 oz. ham, cut into 1 inch strips
  • juice from 1 lemon
  • 1/2 tsp. salt, and pepper

Directions:

Cook your pasta per box instructions. Add peas a minute before pasta is done.

While cooking your pasta melt 1 Tbsp. of butter in frying pan over medium heat, add onion and cook about 4 minutes, add your cheese and ham stirring occasionally until it's all heated about 3 minutes more. Reduce heat to low to keep warm.

Drain pasta and peas. Save one cup of pasta water.

Add pasta and peas to sauce, along with lemon juice, 1/2 tsp. salt and black pepper. Toss to combine. Add some of pasta water if needed to make a light creamy sauce.

Ingredients:

  • 6 oz. whole-wheat spaghetti
  • 12 oz. fish, lobster or crab meat or raw shrimp, cut into 1-inch pieces
  • 1 bunch asparagus, trimmed and thinly sliced

  • 1 large red bell pepper, thinly sliced
  • 1 cup fresh or frozen peas
  • 3 cloves garlic, chopped
  • 1 1/4 tsp. kosher salt
  • 1 1/2 cups nonfat or low-fat plain yogurt
  • 1/4 cup chopped flat-leaf parsley
  • 3 Tbsp. lemon juice
  • 1 tsp. extra-virgin olive oil
  • 1/2 tsp. freshly ground pepper
  • 1/4 cup toasted pine nuts

Directions:

Bring a large pot of water to a boil. Add spaghetti and cook two minutes less than package directions. Add fish, asparagus, bell pepper and peas and cook until the pasta is tender and the shrimp are cooked, 2 to 4 minutes more. Drain well.

Mash garlic and salt in a large bowl until a paste forms. Whisk in yogurt, parsley, lemon juice, oil and pepper. Add the pasta mixture and toss to coat. Serve sprinkled with pine nuts (if using).

Tips: To toast pine nuts, place in a small dry skillet and cook over medium-low heat, stirring, until fragrant, 2 to 4 minutes.

I threw this together last week and hubby liked it a lot. While the pasta is cooking, saute mushrooms and onions in 1 Tbsp. butter with 2-3 dashes garlic powder.

Cook pasta, drain and set aside. In a saute pan, add diced bacon and when it's almost done, add the green onions. Finish cooking, then drain off grease.

In a large saucepan, combine the first seven ingredients. Cook, uncovered, over medium heat until vegetables are tender, about 12 minutes. Stir in spaghetti; heat through.
