Mushroom Salad

Ingredients:

  • container of fresh mushrooms
  • 1 green pepper, thinly sliced
  • 1 onion, sliced thin
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/2 cup safflower oil

Directions:

Slice mushrooms, cored green pepper and onion into thin slices. Combine vinegar, sugar and oil and add to veggies. Chill. Let marinate at least 3 hours.

Low Carb Marinated Mushroom Salad

This salad might be low-carb and low-calorie, but it is full of flavor. It is easy to make and only has a few ingredients.

Ingredients:

  • 2 cups sliced portobello mushrooms
  • 2 tablespoons Paul Newman's Oil and Vinegar Salad Dressing
  • Several Romaine lettuce leaves
  • 1 teaspoon dried dill

Directions:

Toss mushrooms in dressing. Wash lettuce leaves and place on serving plate. Spoon mushrooms on top. Sprinkle with dill.

Yield: 2 servings
