Spinach Salad

Arrange spinach greens in shallow bowl. Top with neatly arranged bacon bits, egg slices, beets, croutons and blue cheese. Shake dressing ingredients well. Drizzle over salad.

Mandarin Almond Green Salad

In large salad bowl, toss salad, bacon, oranges, onion, almonds and cheese. Combine the remaining ingredients in a jar with a tight-fitting lid, and shake well. Pour over salad and toss to coat.

Besides loving all of the ingredients in this salad, I like it because you can put it together a day ahead, and it will remain fresh and crispy as long as you don't add the dressing until just before serving.

Spaghetti Squash Salad

Remove seeds and stringy pieces from center or squash. Discard. Cook each half of squash in microwave for 8 minutes. Will be VERY hot! When cool, use a fork to rake the insides of the squash.

Broccoli Salad

Wash broccoli and cut into small pieces. Fry bacon until crisp and crumble into small pieces. Add raisins, sunflower seeds and chopped half of red onion.

Cabbage Salad

Grate cabbage. Mix together all other ingredients and pour over the grated cabbage. Refrigerate. Serves 8.

Layered Green Salad

Place a layer of crisp lettuce in small chunks in a large wooden bowl. Spoon over the mayonnaise and spread thinly. Add a layer of sliced onions. Sprinkle onions lightly with sugar.

Refrigerated Dill Cucumber Salad

My mom use to make a cucumber salad. Sadly, she has passed away and I do not have the recipe, but it contain dill. She would put the salad in a jar, then place it in the fridge and would last about a week.

Carrot Salad

Mix gelatin and boiling water; add marshmallows and stir until both are dissolved. Allow to cool. Add pineapple and carrots. When mixture begins to set, add Dream Whip or whipped cream and mayonnaise. Let set and cut in squares.

Tomato Salad

Combine dry ingredients. Add vinegar and oil. Blend. Add minced parsley and green onions, sliced. Pour over quartered tomatoes which have been arranged over a bed of endive.

Mixed Vegetable Salad

Mix together first 4 ingredients and add dressing. For dressing, cook until thick and mix with salad. Chill thoroughly. This will keep for several days.
