How to Make Homemade Potato Chips

Before you slice the potatoes into thin slices, scrub them well, but don't peel them. The peel gives them a different taste and texture than the store bought chips. They are so much tastier! And the peel is good for you. Also, use canola oil. It doesn't burn as fast as other oils, it tastes good, and it is much healthier than animal fat oils.
Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat.
Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.
Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave.
Remove chips from plate, and toss with salt (or other seasonings). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.
I love homemade chips. What I do after I peel my potatoes is use the peeler to slice the chips. Just be careful towards the end not to slice you fingers. Then I rinse the slices until the water is clear, getting as much starch off as I can. I do drain the wet chips after rinsing on towels.
Then I use my daddy fryer. Doesn't take a lot at a time, but if you watch they will stop sizzling when cooked. You can leave them in longer, if you like them darker. Then drain on paper towel and salt.
Homemade chips are easy to make. Slice potatoes very thinly, and drop into hot oil. Don't fry to quickly or they'll burn. Do NOT add salt while frying, or the will never crisp properly. Once chips are golden brown, lay to drain on paper toweling and season as desired. I've never had to worry about storing them or keeping them fresh, as the kids have always eaten them about as quickly as I could make them. But I would think keeping them in a sealed tupperware type container would be the best idea. Of course they won't keep as well as store bought chips because they are a real food without preservatives, but they taste much better too!

Due to health issues, I cannot eat fried foods. I would love a simple recipe for baked potato chips the thinner, the better. I have attempted this before, but didn't have much luck.
