In a large saucepan combine kidney beans, great northern beans, undrained tomatoes, tomato sauce, water, green pepper, onion, chili powder, sugar, basil, cumin, salt, ground red pepper, and garlic
Simmer the above ingredients. Can add 2 cans of red kidney beans, if desired.
Recipe for Spicy No Bean Chili
Does anyone have a good no bean chili recipe that's spicy but not ridiculously spicy to where you can't eat it?
I call this Louie's chili as it was based off of my late dad's recipe when we were growing up. The only thing I changed was using V-8 juice instead of tomato juice. (V-8 didn't exist yet when we were kids).
Cut up bacon; cook slightly, then set aside. Brown ground beef. Add other ingredients, after first draining and mashing tomatoes so they will blend with rest of ingredients.
Brown meat. Add rest of ingredients. Bring mixture to rolling boil. Reduce heat and simmer 2 1/-3 hours.
Puree the tomatoes in a blender or food processor. Brown the beef in the olive oil for 2 to 3 minutes. Add 1 Tbsp. ground cumin, the cumin and caraway seeds, and the chopped onion.
Heat the olive oil in a large saucepan. Add the garlic and onions and saute over medium-high heat for 5 minutes. Add the beef and saute for 7 to 8 minutes longer, stirring frequently, until all the beef is browned.
Chili from St. Augustine's Spanish Quarter
I'm looking for a recipe for a chili type soup we ate in St. Augustine, Fl. Spanish Quarters. We used to go there on vacation and had this wonderful soup with homemade bread. I have tried to get it other places and have tried with trial and error, but can't get the spices just right. Can anyone help?
In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
In a large saucepan or Dutch oven, cook beef, pork, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain.

Amazing Vegetarian Chili. This was a prizewinning entry for a recent Chili Cook-off at my husband's work. As I had to make two separate batches, I had to keep track of the amounts of ingredients I used.
Hamburger Chili. Combine first 5 ingredients and fry until hamburger is brown. In a large kettle, heat water to boiling. Combine sugar, flour and ketchup. Mix slowly into boiling water.
Recipe for Virginia Potato Soup. Cook veggies until soft. Add soups and seasonings. Bring to a boil. Simmer a little. Remove from heat.
