I would like a recipe for vegetarian meatloaf. It should be rich in protein. By vegetarian I mean no meat, no fish, no eggs, and no chicken. I can use milk and milk products.

Easy Chick Pea Curry for a Crowd
This recipe is wonderful and freezes really well! Great if you want to feed a crowd of people without too much fuss, time or money. I make this and freeze it for lunches.
Cut eggplant in 1/2 inch slices and peel. Coat with flour, egg mixture and bread crumbs. Brown in oil in frying pan. In baking dish, put a thin layer of tomato sauce, then a layer of eggplant, then a layer of tomato sauce, then a layer of Mozzarella cheese.
Vegetarian "Chicken" Enchilada Recipe
When I lived in California, a restaurant near Loma Linda Hospital served the BEST Vegetarian "Chicken" Enchiladas! From what I remember it had flour tortillas rather than corn. It had green chiles and a sour cream/cheese sauce. I would LOVE to have the recipe. It was so delicious. They served it every Thursday for lunch. I no longer remember the name of the restaurant.

Someone asked about how to save money on tofu. It has been 30 years since I last made some, and I have lost the recipe. It was in a book that I no longer have, because I can't digest soy products anymore. I did an email search and found only complicated, exotic-sounding recipes. So I am going to tell you as much as I can remember. It isn't a big deal, but you will have to experiment to get the temperature right. Don't let my vagaries stop you. It only costs the price of a pound of the dry soybeans to try this out.
I found a recipe for tofu stir fry. It's delicious, no matter what veggies you want to use. Stir fry veggies in oil, with the white parts of green onion for one minute. Add all but 1 Tbsp of of broth.

Easy Vegetarian Meals for Two People
I'm looking for vegetarian recipes for one or two people that are easy to prepare and to digest. Soups, salads, and smoothies would be ideal.
This is something I always bring at potlucks where there will be meat-eaters present. It's always a HUGE hit and I get asked for the recipe every time I bring it. For those who think vegetarians only eat "rabbit food", this is one sure way to convince them otherwise! :D
Basically, you take marinated carrots, pressure cook them (steaming might work) until soft and place into hot dog buns with all the fixin's (kraut, onions, mustard or whatever you prefer).
Place 3-1/2 cups of cold water in a covered glass pot and heat on the stove top until it boils. While the water is heating, rinse the lentils in a strainer, and remove any stones or other foreign matter.
Soak the garbanzo beans overnight in the water. Add salt and simmer 1 hour. In another pan, mix the remaining ingredients and simmer for 20 minutes.
When all six kids were at home and I was feeding us on $35 a month, this was a favorite. Lentils are cheap, and my husband grew all the vegetables. Served with mashed potatoes with butter and a veggie like corn or green beans, we thought this was fine eating.
Vegetarian Lentil and Nut Loaf
Grind nuts in a blender and place them in a large mixing bowl. Put onion and eggs in blender and blend until onion is very finely chopped. Add remaining ingredients and mix well.
Recipe for Junk Pie. After raising my four children, I am now "down" to one (and one who keeps coming back!) My daughter and I don't eat meat, so it's always a challenge to come up w/good, fast, healthy, and yummy meals. I made this concoction last night, and it's a hit! I call it Junk Pie
