Squash Dressing

Cook onion in melted margarine until tender. Mix all ingredients together and put into casserole dish. Bake at 350 degrees F. until brown on top.

This is my FIL's WONDERFUL Thanksgiving and Christmas dressing recipe. He "shared" the recipe with me when I became a part of the family. Trust me, it is AWESOME and you will want to make an extra batch of it because it will go fast. All of the grandkids fight over the last piece. Yum Yum.

Louisiana Corn Bread Dressing

Simmer gizzard, heart and neck in a quart of water until tender. Add liver and cook a few minutes more until done. Cut all meat fine for dressing. Saute' celery, onion and shallots in butter until done but not brown.

Old Fashioned Oyster Stuffing

Cook celery and onions in butter until tender, but not brown. Add crumbs, oysters, bay leaf, seasonings and eggs. Add enough liquid to moisten; you don't want the mixture dry, but it must not be too moist.

Grandmother's Oyster Dressing

Mix sage and hot water. Beat eggs and 1/3 cup water together. Combine all ingredients and let ripen 3-4 hours. For a southern touch, substitute cornbread for half the bread.

Yam Souffle'

Boil yams until tender. Peel and mash or beat with electric blender. Stir in melted butter, sugar, nutmeg, lemon peel and egg yolks. Cool slightly and fold in stiffly beaten egg whites.
