Seasoning a Cast Iron Pot
I bought a cast iron pot with cover at a garage sale. I have scraped and sanded with sandpaper several times. But, I forgot how to season it for use. Would appreciate any help.

Baja Express Salsa Baja
Today we visted Baja Express, and I think I am in LOVE! Does anyone have a copycat recipe for Salsa Baja? It is a thin brown salsa (not at all hot) that has fresh tomato, onion, and cilantro. It almost tastes like it has coffee in it, but the waitress said it is just roasted tomatoes. Don't know what it is, but it is YUMMY!

Today's Recipes
L Is for Lemon Squares
Ingredients
- 1 cup flour
- 1/2 cup butter, softened
- 1/4 cup powdered sugar
- 1 cup sugar
- 2 Tbsp. lemon juice
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 eggs
Directions
Heat oven to 350 degrees F.
Mix together flour, butter and powdered sugar in small bowl.
Press evenly with hands in bottom and about 5/8 inch up sides of an ungreased pan, 8x8x2 inch. (If dough is sticky, flour fingers.) Bake about 20 minutes
beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust.
Bake just until no indentation remains when touched lightly in center. Let stand until cool then cut into 1 1/2 inch squares. Makes about 25 squares.

Healthy Onion Rings
Ingredients
- Nonstick cooking spray
- 1 large onion
- 1 1/4 cups Italian style bread crumbs
- 1/2 tsp. minced fresh garlic
- 1 cup low fat milk
- 1 cup all purpose flour
- 3 large egg whites, beaten slightly
Directions
Preheat oven to 400 degrees. Spray 2 large cookie sheets with nonstick spray. Cut onion into 1/2 inch thick slices. Separate slices into rings. In a small bowl, combine bread crumbs and garlic. Set aside. Place milk, flour, and egg whites into 3 separate small bowls. Dip each onion ring into milk, flour, egg white and bread crumbs (in that same order). Place on prepared cookie sheets and bake for 20 minutes. Turn onion rings over and bake till golden brown, about 10 minutes longer.

Desert-Safe Treat Recipes For Troops Overseas
These treats were put out by Nestle about a year ago and have been tested in their kitchen and do meet the required Middle East guidelines as well as the U. S. postal guidelines.
Irresistible Brownies
Ingredients
- 1 1/2 cup flour
- 1 cup nestle baking cocoa
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 butter flavored crisco
- 2 cup sugar
- 4 large eggs
- 2 cups Nestle Toll House premier white morsels
Directions
Heat oven to 350 degrees F grease 13x9 inch pan.
Mix flour, cocoa, baking powder and salt in small bowl.
Mix shortening, sugar, eggs, in large bowl with mixer. Until creamy.
Gradually add in flour mixture a little at a time to
shortening mixture.
Stir in morsels.
Pour into prepared pan.
Bake for 25-30 minutes or until toothpick inserted into middle comes out clean.
Cool completely and cut into squares. Makes 30 brownies.
Double Chocolate Brownies
Ingredients
- 3/4 cup flour
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/3 cup vegetable shortening
- 3/4 cup sugar
- 2 Tbsp. water
- 2 cup Nestle Toll House Semi Sweetened Morsels (divided)
- 2 large eggs
Directions
Heat oven to 325 degrees F. Mix flour, baking soda and salt in small bowl.
Melt shortening, sugar and water in medium saucepan to boiling, stirring constantly over medium heat. Remove from heat, stir in 1 cup morsels till smooth.
Add eggs, 1 at a time beating well after each addition. Gradually add flour mixture a little at a time. Add remaining morsels, spread into prepared pan.
Bake 30-35 minutes or until toothpick inserted into center comes out slightly sticky. Cool completely. Cut into square makes 16 brownies
Creative Pan Cookies
Ingredients
- 2 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 1/4 cup sugar
- 1 cup butter flavored crisco
- 2 large eggs
- 2 Tbsp. water
- 2 cup Nestle Toll House Semi Sweet Morsels
- 2 1/4 cup quick oats(uncooked)
- 1 cup dried apple slices or raisins
Directions
Heat oven to 375 degrees F.
Mix flour, baking soda, salt, and cinnamon in small bowl.
Mix sugar and shortening in large mixing bowl till smooth. Add in eggs.
Gradually add flour mixture and water a little at a time to sugar mixture stir in morsels, oats, and apples (or raisins.)
Spread batter into ungreased jelly roll pan (15x10 inch) or 9x13 inch pan.
Bake 18-20 minutes or just until lightly browned. Let cool then cut into bars.
Makes about 48 bars.
Butterscotch Scotchies
Ingredients
- 1 1/4 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1 cup butter flavored crisco
- 1 1/4 cup sugar
- 2 large eggs
- 1 1/2 Tbsp. grated orange peel (1 medium orange)
- 2 tbsp. water
- 3 cup quick or old fashioned oats (uncooked)
- 1 2/3 cup Nestle Toll House Butterscotch Morsels
Directions
Heat oven to 375 degrees F.
Grease 15x10 inch jelly roll pan or 9x13 inch baking pan.
Mix flour, baking soda, salt and cinnamon in small bowl.
In large mixing bowl add shortening, sugar, eggs, orange peel and mix by mixer on medium speed till creamy.
Gradually add in flour mixture a little at a time. Add oats and morsels. Spread into prepared pan.
Bake 18-22 minutes or till golden brown. Cool completely cut into bars.

M Is for Mud Pie
Ingredients
- 22 chocolate sandwich cookies, finely crushed
- 3 Tbsp. butter, softened
- 1 quart coffee ice cream, softened
- 1 cup fudge ice cream topping
Directions
Mix cookie crumbs and butter until well blended, press firmly onto and up the sides of a 9 inch pie pan.
Spread ice cream into crust.
Top with fudge topping.
Freeze at least 6 hours or until firm.
Keep leftover pie in freezer.

Chocolate Cut-Out Cookies
Ingredients
- 2 sticks margarine
- 2 cups sugar
- 3 eggs
- 3 teaspoon vanilla
- 3 cup all purpose flour
- 1 teaspoon baking powder
- 10 Tablespoons cocoa
Directions
Cream margarine and sugar until light and fluffy; add eggs, one at a time, beating well. Combine flour, cocoa, and baking powder; add and mix well. Spoon dough onto waxed paper and wrap. Chill in refrigerator for 2 hours. Divide dough in half. Roll out each half 1/2 inch thick. Cut with cookie cutters; place on lightly greased cookie sheets and bake at 350 degrees for 10-12 minutes. Servings depends on size of cookie cutters used. (The smaller the cookie cutters, the more cookies you'll have.)
This recipe would be great for Halloween cookies!
