Mini Meatballs

Mini meatballs that pack a flavor punch. Children love them because they are kid-sized.

Ingredients:

  • 1 lb. ground beef
  • 1 small onion, finely minced
  • Advertisement

  • 1/3 cup minced green pepper
  • 4 garlic cloves, minced
  • 2 tsp. basil
  • 2 tsp. oregano
  • 1 Tbsp. Worcestershire sauce
  • 2/3 cup bread crumbs
  • 1/2 cup milk
  • 1 egg, lightly beaten

Directions:

Put the first set of ingredients in a mixing bowl and make a well in the center. Don't mix them up yet, they will be more tender if you keep the mixing to a minimum. Put the second set of ingredients in the well and let the liquids soak into the bread crumbs.

Now mix it all up with a spoon, using your hands only at the end, to make sure it is mixed thoroughly.

Using a tablespoon at a time, form into balls. Handle as briefly as possible. I use a meatball maker that makes 6 at a time, very handly.

On medium high heat brown on all sides. Reduce heat and cook through, or finish cooking in a sauce, soup, or stew.
