Fruitcake

I tasted this fruit cake (absolutely divine!), got this recipe from an Indian lady, Vee Rai. The proof is in the eating!

Ingredients

  • 250 g butter
  • Advertisement

  • 1 cup dark brown sugar
  • 500 g fruit cake mix
  • 2 teaspoons baking soda
  • 3 cups (750 ml) water
  • Almonds chopped 100 g (optional)
  • 1/2 block of dates (optional)

Directions

Place all of the above in a pot and boil on moderate heat for 35 minutes then allow the mixture to cool thoroughly.

When the mixture is cold add 1/2 cup of brandy and 2 well beaten eggs. Then add 3 cups of selfraising flour and mix well - mixture will be soft and partly liquidish. Pour into round cake tin (23 cm) and bake in preheated oven at 160 degrees C (appx. 325 degrees F) for one hour. Test with knife or skewer to see if cooked.
