Looking For Cool Salads For a Packed Lunch

I am looking for receipes for cold salads, such as pasta, egg salad, and such.

My husband travels for his work and he takes a cooler and I am running out of ideas for cold salads for him to take along.


Any resources would be greatly appreciated.

2 heads of broccoli
10 slices bacon cooked and crumbled
packzge of sunflower seeds,optional
1 cup raisins
2 Tablespoons sugar
2 Tablespoons vinegar
1/2 cup chop pecans
mix with mayo..light mayo..enough to mix it good...


You do not need to add Raisins if ya do not want to..you can use splenda,instead of sugar!!!




veggie slaw
1 bunch brocolloi
1/2 head of cauliflower
5 baby carrots grated up
1/2 small sweet onion
1/2 pound bacon cooked and crumbled
1 cup shred cheddear cheese
1 cup light mayo or less
2 Tablespoon splenda
2 Tablespoons cider vinegar
1/2 t salt
1/4 tea pepper

chop brocolli and cauliflower,very fine in processor.grate carrots...add together..
mix splenda and vinegar together,add to mayo....mix all together..and eat til the world looks level..

this is a very good salad..we love it!!!! Hope you do!!

7-LAYER MACARONI AND CHEESE PILE-UP

2 boxes spiral macaroni and cheese
2 c. Miracle Whip
1/4 c. chopped onion
2 T. prepared mustard
2 c. shredded lettuce
1 1/2 c. chopped tomatoes
1 c. frozen peas, thawed and drained
1/2 c. chopped celery
2-3 hard-cooked eggs, chopped
4 crisply cooked bacon slices, crumbled

Prepare macaroni and cheese as directed. Combine Miracle Whip, onions
and mustard; add to macaroni and cheese. In a 9x12 baking dish, layer
half of macaroni and cheese and all of the lettuce, tomatoes, peas,
celery and eggs. Cover with remaining macaroni and cheese; press to
edges to seal. Cover; refrigerate several hours or overnight. Top
with bacon just before serving.

This is one of my favourite cold salads and super simple to mix up.

Japanese Cabbage Salad

1/2 c. sliced or slivered almonds
2 tbsp. sesame seeds
1/2 a med. head of cabbage (shredded)
12 oz. fresh bean sprouts
2 c. fresh mushrooms
2 green onions chopped
1/4c. sunflower seeds

1 pkg instant noodles (any flavour)

Dressing:
the instant noodle seasoning
1/2c. cooking oil
2-4tbsp. soy sauce
3 tbsp vinegar
1 tbsp sugar
1 tsp salt
1/2 tsp pepper

*everything can be mixed ahead of time, but save the noodles until you are ready to eat as they can become soggy.

The great thing about this recipe is that you can always change the ingredients some (eg: leave out the muchrooms or add cooked cubed chicken breast).
