Fluffy Potato and Frankfurter Casserole
- 6 Tbsp. margarine
- 1 med. size onion, chopped
- 1/2 cup milk
- 1 tsp. salt
- 6 med. potatoes, mashed
- 1 pkg. frankfurters
- Microwave cheese sauce
Microwave Cheese Sauce:
- 1 cup milk
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. butter
- 1/2 cup shredded cheese
- 1/4 tsp. Worcestershire sauce
Melt 2 tablespoons margarine in small frying pan. Saute' onion over low heat just until tender. Beat onion, remaining margarine, milk, salt and pepper into potatoes. Spoon into greased baking dish. Spread evenly. Lay frankfurters on top of potatoes. Bake in moderate oven at 375 F. for 20 minutes or until piping hot. Serve and top with Microwave Cheese sauce.
For Sauce: Combine milk, flour, salt & pepper in 4 cup glass measure. Beat with rotary beater until smooth. Add butter, cheese and Worcestershire sauce. Microwave 3 minutes on high. Beat well and continue cooking 1-2 minutes on high or until thickened. Beat lightly and serve. Makes about 1 cup sauce.

This was my stepdads fav meal growing up and he still begs his mom for it. I wont touch it, lol, but he and my mom says it's good.
