Orange Coconut Muffins

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup margarine or butter, melted
  • 1/2 cup orange juice
  • 2 beaten eggs
  • 1/2 cup flaked coconut
  • 2 tsp. finely shredded orange peel
  • Flaked coconut, opt.

Directions

Grease 12 muffin cups or line with paper bake cups, and set aside. Combine flour, sugar, baking powder and salt in a mixing bowl. Make a well in the center. Combine melted margarine or butter, orange juice and eggs. Add all at once to flour mixture. Stir just till moistened (batter should be lumpy). Fold in coconut and orange peel.

Spoon batter into prepared muffin cups to 3/4 full. Top with additional coconut, if desired. Bake in 375 degrees F oven for 15-20 minutes. Cool in pans on wire rack for 5 minutes. Remove from pans, and serve warm. Makes 12.
