Choosing Good Potatoes

Is there a way to tell if the potato I purchase at a grocery store is good to eat? I ask because I recently purchased a red skinned potato that was green just underneath the skin and it wasn't that good.

Creme Caramel Chai Smoothie

Ingredients

  • 2 (6 oz) containers custard style creme caramel yogurt
  • 1 (1.1 oz) package chai tea latte mix
  • 1 banana cut into 1/2 inch thick chunks
  • 1/2 cup milk
  • 1 Tbsp. caramel flavored sundae topping
  • 1 1/2 cups crushed ice

Directions

Add all ingredients in blender and blend until smooth, scraping down sides as needed.

Grandma's Easy-Do Rolls

Ingredients

  • 3 cups sifted flour
  • 1 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 Tbsp. sugar
  • 1/3 cup shortening
  • 1 package yeast
  • 1/4 cup lukewarm water
  • 6 Tbsp. vinegar plus enough sweet milk to make 3/4 cup liquid

Directions

Sift flour, baking soda, salt and sugar together and cut in shortening. Heat vinegar and milk to lukewarm and combine with yeast. Add liquid to dry ingredients gradually and stir only until flour is blended. Dough should be as soft as can be handled. Turn onto lightly floured board; knead gently one minute. Shape as desired. Place on lightly greased baking pan. Let rise about an hour until doubled in bulk in warm place. Bake at 400 degrees F for about 15 minutes. Makes approximately 18 rolls.

Yummy Hamburger Soup

Brown 1 pound of hamburger in a Dutch Oven with 1 cup of chopped onions and 2 teaspoons salt. Add 1 cup of chopped, peeled carrots and 1 cup of chopped, peeled potatoes. A teaspoon of parsley is nice but optional. Then add a quart of homemade tomatoes and a cup or two of water and let it simmer for 20 minutes. Taste for salt and serve with a slice of homemade bread or a biscuit. I often have seconds.

Turnip Puffs

Ingredients

  • 3 cups cooked mashed turnips
  • 2 Tbsp. butter
  • 2 beaten eggs
  • 3/4 cups breadcrumbs
  • 1 Tbsp. diced onion
  • 1 Tbsp. parsley
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. lemon juice

Directions

Add butter to mashed turnip. Now mix remainder of ingredients. Place in 3 qt. Casserole dish. Bake at 375 degrees F for 30 minutes.

Grandma's Banana Pudding

Ingredients

  • 2 eggs, beaten by hand
  • 1 cup sugar
  • 1 Tbsp. flour
  • 1 large can evaporated milk
  • Bananas
  • Vanilla wafers

Directions

Place eggs in saucepan. Add sugar, flour, and milk. Cook over low to medium heat until thick. Stir often. heat may need to be reduced if it starts to scorch on bottom. Let pudding cool completely. Layer bananas, vanilla wafers, and pudding in large bowl twice. Cool Whip may be added to layers if desired.

Mocha Mix

Ingredients

  • 2 1/4 cups non dairy creamer
  • 1 1/2 cups sugar
  • 3/4 cup instant coffee granules
  • 3/4 cup unsweetened cocoa

Directions

Mix all ingredients together and store in airtight container.

To serve use 1/4 mix and 1 cup boiling water.

This make a nice jar mix to add to a gift basket.

Taco Rice

Ingredients

  • 1 lb. hamburger
  • 1 med. onion
  • 1/2 package taco seasoning
  • 1 can chunk tomatoes
  • 1 cup rice
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 2 cups Bisquick mix
  • 3/4 cup milk

Directions

Fry hamburger and onions until brown. Add taco seasoning and tomatoes. Cook rice with reserved tomato juice. Add enough water to make 2 1/2 cups. When rice is soft, mix it with the hamburger mixture. Pour into a 9x13 inch pan. Mix together mayonnaise, sour cream and cheese. Spread over hamburger mixture. Make a thin batter of Bisquick and milk and pour over top of sour cream mixture. Bake at 400 degrees F for 30 minutes.

Suggestion: If I don't have shredded cheese, I add a layer of Velveeta on top of sour cream mixture.

Blackberry Pudding

Ingredients

  • 2 cups sugar
  • 2 cups flour, sifted
  • 1/3 cup butter
  • 2 cups boiling water
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 cup milk
  • 2 cups blackberries

Directions

Cream 1 cup sugar and the butter together. Add the flour, baking powder, salt, milk and mix well. Then pour blackberries on top, and then pour 1 cup sugar and the 2 cups of boiling water. Bake in 350 degree F oven for about 50 minutes or until top is golden brown.

Stuffed Peppers

Stuffed Peppers I

Ingredients

  • 6 green peppers
  • 2 cups chopped chicken
  • 3 Tbsp. butter
  • 2/3 cup buttered cracker crumbs
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1 1/2 cup milk

Directions

Cut top from the peppers; remove carefully all the seeds and tongue. Cut then slices from the bottoms so the peppers will stand. Melt the butter, add the flour and seasoning, then the milk; add the meat and fill the peppers with the mixture. Cover with crumbs made by stirring 2/3 cup cracker crumbs into 2/3 Tbsp. of melted butter. Place the peppers in a baking pan and cover the bottom with boiling water. Bake in 375 degrees F oven for 30 minutes.

Stuffed Peppers II

Heat to boil:
  • 2 c. tomato juice
  • Salt
  • 1 T. syrup
  • Pepper

(This will be poured over stuffed peppers.)

  • 1 1/2 lbs. ground beef (browned)
  • 1 t. salt
  • 1/4 t. pepper
  • 1 onion (diced)
  • 2 T. heaping rice (soak rise in 1/2 c. tomato juice)
  • 4-6 peppers (depending on size of the peppers)

Stuff peppers with meat mixture. Bake at 350 for 1 hour.
