Vegetarian Lentil Soup Assistance

As I was walking down the aisle of the grocery store, perusing the canned lentil soup's sodium percentages, I began grumbling mentally. Why is it that the high sodium soup in the can tastes better than mine? I went home and while making the soup, realized that my soup has a green scent. By this I mean too raw. Kind of like the fresh green scent you get from being around dried sacks of vegetarian green pet food. Newly mown grass. Don't know how to explain it better than that. Any suggestions? Should something be pre-sauteed and then added to the soup pot to improve the flavor? In the past I sauteed onions and added them to the soup, but it didn't make much of a difference. I wash the lentils, put them in water and boil until done. I add some Vegemite in the beginning and toward the end of cooking, add carrots and a bit of celery. Serve with chopped up jalapeno, carrot and anything else I can think of, but the canned stuff still tastes better to me. Thanks for your help! Holly

Freezer Meals - Tips and Recipes

I have fibromyalgia and am finding daily chores becoming exhausting. I recently purchased a freezer and hope to cut my grocery shopping to once or twice a month at the most. I am looking for "make ahead" and freezer meals. Any tips, ideas and suggestions will be much appreciated. Fancy55

Peanut Butter No-Bake Cookies

I am looking for a cookie recipe that is a lot like the oatmeal nobake cookies except it has saltine crackers and peanut butter but dosen't have the cocoa. This is a drop cookie. I think I remember all the ingredients but not the mesurements. Butter, milk, sugar, vanilla, peanut butter, and saltine crackers added at the end. If anyone has this recipe I would love to have it again. Thanks, Leanne

Watergate Salad

Watergate Salad I

Ingredients:

  • 1 (8oz.) carton whipped topping
  • 1 box pistachio pudding
  • 1-2 cup small marshmallows
  • 1 (16 oz.) can crushed pineapple and juice
  • 1/2 cup nuts

Directions:

Fold dry pudding into whipped topping in a bowl. Add pineapple and juice, marshmallows and nuts. Refrigerate.

Watergate Salad II

Ingredients

  • 1 can crushed pineapple (undrained)
  • 1 pkg. pistachio instant pudding
  • About 2 cup mini marshmallows
  • About 8 oz. whipped topping (Cool Whip)

Directions

Blend ingredients together by hand. Put in bowl. Chill and serve. Can garnish with maraschino cherries (optional).

Chicken Con Queso

Ingredients

  • 2 1/2 cups cooked chicken, cut in bite size pieces
  • 1 can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 small can chopped green chilies
  • 1 cup each: grated Monterey jack and Colby cheese
  • 1 bag of tortilla chips

Directions

Cover the bottom of an 8 x 8 dish with the tortilla chips. Mix the first four items together and pour over the tortilla chips. Top with the grated cheeses. Bake at 325 degrees for 30 minutes or until cheese melts. Serve with a side of Spanish rice and refried beans.

Tropical Slush

Ingredients

  • 6 cup water (divided)
  • 5 medium ripe bananas
  • 2 cup sugar
  • 2 (12oz.) cans frozen orange juice concentrate (thawed)
  • 1 (12 oz.) can frozen lemonade concentrate (thawed)
  • 1 can unsweetened pineapple juice
  • 3 (2 liter) bottles lemon-lime soda

Directions

In a blender container, process 1 cup of water, bananas, and sugar until smooth. Pour into a large container; add the concentrates, pineapple juice and remaining water. Cover and freeze. Remove from freezer 2 hours before serving. Just before serving, break up and mash mixture with a potato masher. Stir in soda.

Unusual Cottage Cheese Salad

Ingredients

  • 1 pkg. orange Jello
  • 1 carton cottage cheese (small curd)
  • 1 small container Cool Whip
  • 1 can crushed pineapple (drained)
  • 1 can mandarin oranges (drained)

Directions

Sprinkle dry gelatin over cottage cheese. Stir to dissolve. Add well-drained fruit and cool Whip. Spoon into a pretty bowl and refrigerate until time to be served.

Strawberry Punch

Ingredients

  • 1 can pineapple juice (chilled)
  • 1 (6 oz.) can frozen pink lemonade (thawed)
  • 2 1/4 cup water
  • 3/4 cup sugar
  • 1 qt. strawberry ice cream
  • 2 1/2 quarts ginger ale (chilled)

Directions

In a punch bowl, combine the first 4 ingredients. Add ice cream; stir gently. Add ginger ale; stir gently. Serve immediately. Yield: 6 quarts

Grilled Potatoes

This quick and easy recipe is always a hit during the summer!

Ingredients

  • 4 medium to large cleaned, unskinned potatoes
  • 1 onion, sliced or cut into chunks
  • 1/2 stick butter, sliced into 4 tbsp.
  • Dill weed
  • Salt
  • Ground black pepper
  • 4 sections of aluminum foil (12 to 14 inches each)

Preparation

Pre-heat grill.

Directions

Slice potatoes into 6-8 lengthwise wedges each.

Place potato wedges on to open aluminum foil sections; top with onions.

Sprinkle with dill, salt and pepper to taste.

Top each with a slice of butter.

Fold over top of aluminum foil loosely and crease, then fold up ends of foil.

Place on medium-hot grill.

Cook for 8-10 minutes. Check 1 packet after 8 minutes. If the potatoes are not slightly browned, cook longer. Potatoes taste best when slightly browned.

Cranberry Raspberry Ice Tea

Ingredients

  • 4 cup iced tea
  • 4 cup cranberry-raspberry drink (chilled)
  • 1 cup raspberries
  • Fresh mint leaves (if desired)

Directions

Mix tea and cranberry-raspberry drink. Pour over ice; top with raspberries and garnish with mint.
