Fish in Foil
- 1 lb. fish fillets (cut into 4 serving size portions; or substitute chicken, if desired)
- salt and pepper, to taste
- 2 large carrots, thinly sliced
- 1 zucchini, thinly sliced
- 1/2 cup water, divided
Preheat oven to 450 degrees F. Place each fish portion in the center of a piece of aluminum foil. Season to taste. Place veggies and 2 Tbsp. of water on top of each. Fold foil over and seal securely on all sides. Place the foil meals in a large baking pan and bake 18 minutes. Serves 4.
