Diabetic Spice Cookies
Ingredients
1 1/4 cups water
1/3 cup shortening
2 cups raisins
2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. baking powder
4 egg whites, slightly beaten
2 cups flour
4 tsp. liquid sweetener
Directions
Boil water, shortening, raisins and spices for 3 minutes. Let cool. Beat in egg whites. Dissolve baking soda in 2 tsp.s water, add the liquid sweetener. Add to egg mixture. Blend flour with baking powder. Mix all ingredients together. Drop by tsp.s onto greased cookie sheet. (They do not spread so can be placed close together on cookie sheet.) Bake at 375 degrees F for 10-12 minutes. Makes about 4 1/2 dozen.
