No Grate Carrot Cake
- 2 cups sugar
- 1 1/2 cups oil
- 4 eggs
- 3 cups flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. soda
- 2 jars junior baby carrots (7 oz. each)
- 1 cup chopped pecans
Combine sugar and oil. Add eggs, 1 at a time. Blend dry ingredients into mixture, adding carrots and nuts last. Bake in tube pan at 375 degrees F for 50 minutes.
