Blackeye Peas |

Ingredients
- 1 lb. blackeye peas
- 2 smoked ham hocks
- 2 14.5 oz. cans chicken or beef broth
- 1 tsp. sugar
- 1-2 bay leaves (depending on size)
- 1 medium white onion roughly chopped
- 2 tsp. minced garlic (1 large garlic clove)
- salt and pepper to taste
Directions
Rinse and sort peas for rocks. Place peas in large stock pot. add chicken broth and 2 more cups water. Add the rest of the ingredients. Bring to a rapid boil. Reduce heat to simmer and cover. Simmer for 4 hours, stirring from bottom every 30 minutes. 30 minutes before peas are ready, remove ham hocks and chop up meat. Add meat back in and discard bones.
