Hi, I bake the muffin recipe on the back of Bob's red mill ground flax seed bag. Five stars!!

I am diabetic and in an effort to lower my blood sugars, began taking 3 Tablespoons of flax seed daily in my morning juice (Crystal Light fake orange juice). Since taking ground flax seed, my blood sugars have been amazingly low. It has even shocked my endocrinologist. I whole heartedly endorse the use of flax seed and so does my physician now.

Flaxseed can be incorporated into your daily intake every day by the following simple steps:

Add 2 T. fresh ground flaxseed into EITHER
yogurt OR cereal OR salad.

Just make sure that you have it once per day.

Orange Flax Bran Muffins

1 1/2 c. oat bran
1 c. flour
1 c. flaxseed*
1 c. natural bran
1/2 tsp salt
2 oranges, washed, quartered, seeded
4 tsp cinnamon
1 T. baking powder
1 c. brown sugar
1 c. buttermilk (or sour milk)
1/2 c. canola oil
2 eggs
1 tsp baking soda
1 1/2 c. raisins (or half raisins & half choc. chips)
1 tsp vanilla

In large bowl, combine brans, flour, flax seed, baking powder, salt and cinnamon. In blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs, baking soda and vanilla. Blend well. Pour orange mixture into dry ingredients. Mix well. Add raisins. Fill paper lined muffin cups almost full. Bake in 375 oven for 18-20 minutes.

*Flax seed may be ground (I always grind mine). Measure first, then grind.

Makes 18 muffins
1 muffin - 275 cal, 6.1 gm pro, 44.5 gm carb, 5.7 gm fiber, 11.5 gm fat

I love ground flax in my baked goods. I add a couple tablespoons in with the flour when I am making muffins. I add a quarter cup to my favorite bread recipe. It gives a wonderful nutty flavor. The most supprising is adding it in to oatmeal raisin cookies. It tasts great.

I put a tablespoon of ground flax seed on my oatmeal every morning. I have even put it on cold cereal too, but I prefer it on oatmeal

I don't have actual recipes but have used wheat germ before in muffins. I would tend to think it could be substituted evenly. We usually mix a tablespoon or so into flavored yogurt or toss some into the cereal bowl.

I'm new with the flax seed too but have heard great things about it health wise so will be experimenting more with it in the future.
