Any Nopales recipes that you would like to share? Nopales are a form of cactus whose outer skin and needles have been removed. High fiber. Very healthy. Supposed to be helpful for lowering glucose or the impact of a high carb meal. I've noticed that my sugar drops a bit more than usual when I've been studying hard and had scrambled eggs with Nopales strips for breakfast. However, this is not an 'instead of' diabetes medication food product.

You Can use them anywhere you would use green beans , Sweet Peppers , Cucumbers , or Sauteed Onions (I add them to nearly everything personally) IF its the Blood Sugar regulating Qualaties you LIke You Should Also google Jicama , and Yucca healthier alternatives to Potatoe's.

These are all parts of my Normal Diet Regimens.

how about a ensalada de nopales or cactus salad?
Cut up the nopales, and add chopped/diced tomato, onion, cilantro, avocado, fresh garlic glove, a small jalapeno pepper and toss with fresh lemon or lime juice. It's so good. chill in fridge before serving.
