Viva La Chicken
Ingredients
1 can cream of chicken soup
1 can cream of mushroom soup
2 small jars salsa - or to taste
1 diced onion
4 double chicken breasts
Directions
Cook chicken breasts; remove meat from bone and cut in large pieces. Cut 1/2 package of corn tortillas into strips and place in a large shallow greased casserole. Add 3 tablespoons of chicken broth on top, alternate chicken and salsa. Add lots of cheddar cheese on top and bake at 300 degrees F, covered for 1 hour. This can be prepared the day before. A few slices of ripe olives may be added. Serves 8.
