- 3 - 4 lbs. chicken
- 2 1/2 quarts. water
- 2 1/2 tsp. salt
- 1 celery stick
- 1 small onion
- 2 bay leaves
- 1 cup rice
Bring chicken to boil in water. Add celery and seasonings. Simmer several hours until tender. (Add more water, if necessary). Drain broth into sauce pan. Wash rice. Add to broth and cook until tender.
