Recipes for casseroles that are based on the Reuben Sandwich. These would be great around St. Patrick's Day. Post your own recipe below.
Reuben Sandwich Casserole
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup Thousand Island dressing
- 16 ounces sauerkraut, rinsed and squeezed dry
- 8 ounces shredded corned beef
- 16 ounces shredded Swiss cheese
Directions
Preheat oven to 350 degrees F (175 degrees C). In a small bowl, combine mayonnaise and dressing. Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut. Serve it with wheat crackers or small pieces of rye bread. Bake for 20 to 25 minutes

Reuben Sandwich Casserole II
Ingredients
- 1 32 oz. bag sauerkraut, drained very well
- 1 lb. deli style corned beef, chipped
- 1 8 oz. bottle Thousand Island dressing
- 1 lb. Swiss cheese, sliced
- 12 slices of buttered rye bread, cut ino small cubes
Directions
Preheat oven to 350 degrees F. In the bottom of a 9x13 inch baking dish, layer the sauerkraut, then the meat, dressing, cheese and bread cubes, pressed down firmly so they stick into the melted cheese. Bake uncovered 30 minutes or until bubbly throughout. Let cool slightly before serving.

Reuben Sandwich Casserole III
I tried this recipe not long ago and we really liked it. I had leftover corned beef so it was easy to assemble. You could try pumpernikel bread in place of the rye.
Ingredients
- 1/2 to 1 pound corned beef, cooked, diced or sliced
- 1/4 cup Thousand Island salad dressing
- 1 can or bag sauerkraut (16 oz), drained and rinsed
- 1/2 pound shredded Swiss cheese
- 6 slices rye bread, crumbled
- 1/4 cup butter, melted
Directions
Place corned beef in a lightly greased 9x13 inch baking dish. Dot with the dressing. Spread sauerkraut over top; sprinkle with cheese. Toss crumbled ry bread with the butter then sprinkle over top. Bake at 350 degrees F for about 30 minutes, or until hot and bubbly.
Serves 6.

Reuben Sandwich Casserole IV
Ingredients
- 3 cups hot water
- 1 cup milk
- 1/4 cup margarine or butter
- 1 tablespoon yellow mustard
- 1 package (7.2 ounces) Betty Crocker roasted garlic mashed potatoes
- 1 package (6 ounces) sliced corned beef, cut into 1/2-inch pieces
- 1 can (14 1/2 ounces) sauerkraut , rinsed well and drained
- 2 cups shredded Swiss cheese (8 ounces)
- 1 tablespoon caraway seed, if desired
Directions
Heat oven to 350 degrees F. Grease square baking dish, 8x8x2 inches. Heat hot water, milk and margarine to rapid boil in 3-quart saucepan; remove from heat. Stir in mustard. Stir in 2 pouches Potatoes and Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth. Spread 1 1/2 cups of the potatoes in baking dish. Top with corned beef. Spread sauerkraut over corned beef. Spoon remaining potatoes over top; spread gently. Sprinkle potatoes with cheese and caraway seed. Bake uncovered about 20 minutes or until cheese is golden brown.

Reuben Sandwich Casserole V
Ingredients
- 1 3/4 cups fresh or canned sauerkraut, drained
- 1/2 pound thinly sliced corn beef
- 2 cups (1/2 pound) shredded Swiss cheese
- 3 tablespoons Thousand Island dressing
- 2 medium tomatoes thinly sliced (or 2 cups canned tomatoes)
- 2 tablespoons butter
Directions
Preheat oven to 425 degrees F. Spread kraut in the bottom of a 1 1/2 quart buttered casserole dish. Top with corned beef, top with shredded cheese, top with dressing, add tomatoes, and top with butter. Sauté 1 cup crumbled, seasoned rye crisp in 1/2 cup butter. Add 1/4 teaspoon caraway seed. Pour on top of other ingredients. Bake 30 minutes or until bubbly. Serves 4-6.
Reuben Sandwich Casserole VI
Ingredients
- 1 16 ounce can sauerkraut, (drained)
- 1 12 ounce can shredded corn beef
- 2 cups shredded Swiss cheese
- 1/2 cup mayonnaise
- 1/4 cup Thousand Island dressing
- 2 medium tomatoes (sliced)
- 2 Tbsp. butter
- 1/2 cup pumpernickel bread crumbs
Directions
Place sauerkraut in a 1 1/2 quart casserole. Top with beef then cheese. Combine mayonnaise and dressing. Spread on top of cheese. Top with tomatoes and set a side. Microwave butter for 1 minute. Stir in crumbs. Sprinkle over mixture. Microwave for 12-14 minutes. You may also use shaved corned beef and tear it apart.

Easy Corned Beef and Cabbage
4 slices bacon or turkey bacon 4 tablespoons butter or margarine 1 head green cabbage coarsely chopped 1 can corned beef
Cook bacon in large pot until almost crisp, the remove from pot Melt butter with bacon grease, add cabbage and stir to coat well with butter. add 1/3 cup water, cover, and cook over medium heat 10 minutes.
Chop bacon, and crumble the corned beef over cabbage. Cook until heated through. You can skip the bacon if you wish. Serve with mustard sauce (1/2 cup yellow mustard mixed with 1/2 cup mayo) I usually do this in my electric fry pan.
