Escalloped Chicken

Great, hearty cold weather recipe!

Ingredients:

  • 1 boiled stewing chicken, cut into pieces
  • 1/4 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup margarine
  • 1 Tbsp. dried sage
  • salt and pepper, to taste
  • 1 1/2 quart bread cubes
  • 1/2 cup flour
  • 4 cups chicken broth

Directions:

Saute onion and celery in margarine. Add sage, salt and pepper; stir into bread cubes. Spray or grease 9x13 inch pan. Place chicken pieces in pan. Put bread dressing on top. Make a thin gravy by stirring flour into chicken broth. Pour evenly over top of dressing. Bake at 350-375 degrees F for 45 minutes.
