Artichoke Pasta Salad
Another one of many great, warm weather salads.
- 2 tomatoes, chopped
- 1 cucumber, sliced
- 1 green bell pepper, sliced
- 1 can artichoke hearts (16oz.)
- 1 lb. pasta, cooked, (macaroni, bow tie, cork screw style)
- 1 1/2 cup vinegar
- 1 1/2 cup sugar
- 3/4 cup olive oil
- 2-3 Tbsp. mustard
- 1 Tbsp. garlic salt
- 1 tsp. pepper
- 1 Tbsp. dried parsley
Combine first 5 ingredients in bowl; toss lightly. Blend vinegar, sugar, oil, mustard, seasonings and parsley in bowl; mix well. Chill for several hours.
