Artichoke Pasta Salad

Another one of many great, warm weather salads.

Ingredients:

  • 2 tomatoes, chopped
  • 1 cucumber, sliced
  • 1 green bell pepper, sliced
  • 1 can artichoke hearts (16oz.)
  • 1 lb. pasta, cooked, (macaroni, bow tie, cork screw style)
  • 1 1/2 cup vinegar
  • 1 1/2 cup sugar
  • 3/4 cup olive oil
  • 2-3 Tbsp. mustard
  • 1 Tbsp. garlic salt
  • 1 tsp. pepper
  • 1 Tbsp. dried parsley

Directions:

Combine first 5 ingredients in bowl; toss lightly. Blend vinegar, sugar, oil, mustard, seasonings and parsley in bowl; mix well. Chill for several hours.
