Looking for Homemade Marinades and Sauces
I haven't bought any stir-fry or marinades for ages and don't intend to... as I am trying to cook from sratch as much as possible but the only one I have that I can make from scratch is a soy/garlic/sweet stir-fry sauce which I double as a marinade. To be honest, I'm rather tired of using the same one each time I cook marinated steak or stir-fries.
When I see Teriaki sauce and stir fry sauces at the supermarket I often wonder if I could duplicate them at home... but the ingredients are often quite obscure as some of them use artificial flavouring to achieve the taste.
I would appreciate any tried and true recipes any of you may have to achieve these sauces... Please don't use brand names of ingredients as I live in Australia and while we can get these ingredients, it helps if you say what the ingredient is rather than the brand name.

Spinach Artichoke Dip
Ingredients
- 1/2 package frozen chopped spinach
- 1 small container of artichoke hearts (Marinated are best)
Boil both of the about items in hot water and strain
Heat cream cheese in microwave for 2 minutes
Directions
Mix artichoke hearts spanich and cream cheese add 1 cup (or more) of parmesan cheese, garlic salt and salt and pepper to taste. ENJOY.

Chocolate Chip Cheese Ball
A sweet alternative to your average cheese ball for showers and parties.
Ingredients
- 8 oz package cream cheese
- 1 stick butter
- 2 tablespoons Brown Sugar
- 1/4 teaspoon Vanilla
- 3/4 cup mini chocolate chips
- 3/4- 1 cup Powdered sugar
Directions
Mix and form into a ball. Serve with Graham crackers or tiny graham cracker or chocolate cookies.

"Sombreros"
This recipe is cheap, easy, and perfect for summer picnics and pool parties!
Ingredients
- Flour tortillas (any size)
- Cream cheese (boxed kind is often cheaper than tub)
- Taco seasoning (packet)
Optional, for dipping:
Ingredients
- bowl
- butter knife
- sharp knife
Directions
Steps:
- Soften the cream cheese to room temperature and place in a mixing bowl.
- Add the packet of taco seasoning to the cream cheese. Stir well.
- Thoroughly spread the mixture onto one side of each tortilla.
- Simply roll the tortilla tightly, then slice width-wise into bite-sized pieces.
Voila! Now you have a stack of zesty, attractive appetizers, perfect for hungry guests! You may also choose to vary the recipe by adding ranch dip seasoning instead of taco seasoning.

Hot Chicken Stir Fry
Serves 2
Cook Time 20 minutes
Ingredients
- 2 boneless, skinless chicken breasts, cut into bite size pieces
- 3/4 cup chopped purple onion
- 3/4 cup yellow squash, chopped
- 3 or 4 hot cherry peppers, sliced
- 6 oz. sugar snap peas
- 1/2 cup cashew nuts
- 1 Tbsp. honey
- 1/2 cup Jamaican Style Jerk Sauce
- Olive Oil
- Prepared brown rice
Directions
Coat wok or electric skillet with olive oil. On medium to medium high heat, cook chicken until almost done.
In separate bowl, mix onion, squash, peppers and jerk sauce. Add to chicken and cook until tender.
Add cashews, honey and peas and cooked brown rice. Toss until coated and heated through.
Serve immediately with a nice bread.

"Don't-Tell-The-Cardiologist" Chocolate Truffle Pie
NOTE: Margarine does not work in this recipe. I tried it and it was a disaster.
Preheat oven to 350 degrees F
Crust
Ingredients
- 1 1/2 cups very finely chopped pecans
- 2/3 cup granulated sugar
- 1/4 cup stick buttermelted
Directions
Combine all ingredients and firmly press onto bottom and up the sides of a 10-inch springform pan. Set the pan on a cookie sheet and bake 15-18 minutes until lightly browned.
Filling Ingredients
- 2 cups heavy cream
- 16 oz. semisweet chocolate, coarsely chopped OR 2- 2/3 cup semisweet chocolate chips
Directions
Put 2 cups heavy cream into a heavy saucepan and cook over medium heat until it just comes to a boil. Place the chocolate in a small electric mixer bowl and pour the hot cream over it. Stir gently until chocolate is melted, then beat at low speed until the mixture is completely smooth. Pour into prepared crust and refrigerate at least 2 hours until set.
Caramel Sauce Ingredients
- 3/4 cup granulated sugar
- 3/4 cup firmly packed brown sugar
- 1/2 cup light corn syrup
- 1/3 cup stick butter
- 2/3 cup heavy cream
Directions
In a medium saucepan combine the brown sugar, granulated sugar, syrup and butter. Cook over medium heat, stirring until butter melts and mixture is uniform. Continue to heat, stirring occasionally until mixture comes to a full boil. Let cool 5 minutes then stir in the cream, blending well. Serve immediately. If not serving immediately, refrigerate and reheat before serving in saucepan or microwave.
Garnish
Just before serving, whip till soft peaks form.
Serving Directions
Release sides of springform pan and cut into 16 or more wedges. Portion warm sauce onto serving plates and top with thin wedges of pie, garnished with whipped cream. Or serve garnished pie and pass the sauce for the side.
