Candied Sweet Potatoes

Ingredients:

  • 6 peeled cooked sweet potatoes
  • 1 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup water
  • 1/2 tsp. salt
  • 2 whole cloves

Directions:

Arrange potatoes cut in half lengthwise in uncovered baking dish. Meanwhile, combine remaining ingredients in saucepan. Boil 5 minutes. Pour over potatoes. Bake at 375 degrees F for 45 minutes. Baste occasionally. Serves 6.

Recipe: Candied Sweet Potatoes

Ingredients:

  • 6 medium sweet potatoes
  • 1 tsp. salt
  • 3/4 cup brown sugar
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 8 marshmallows
  • 1/2 cup cream
  • 1/4 cup chopped nuts

Directions:

Cook potatoes with skins on until soft, but not mushy. Peel and cut in half lengthwise. Arrange in greased baking dish. Mix salt, sugar and and flour. Pour over potatoes. Dot with butter. Add marshmallows and nuts. Pour cream over all. Bake at 350 degrees F for 45 minutes.

Recipe: Candied Sweet Potatoes

Ingredients

  • 1 cup dark corn syrup
  • 1/2 cup firmly packed dark brown sugar
  • 3 Tbsp. margarine
  • 12 medium size sweet potatoes, peeled, halved lengthwise, cook in water until just tender

Directions

In small saucepan, heat first 3 ingredients to boiling. Simmer 5 minutes. Pour over potatoes that have been place in a 9x13 inch baking dish. Bake 20 minutes, basting often at 350 degrees F.

Recipe: Candied Sweet Potatoes

Ingredients

  • 6 medium size sweet potatoes
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1 1/2 cups light corn syrup
  • 1 orange, thickly sliced with peel

Directions

Peel potatoes and cover with water. Bring to a boil, add orange and cook until almost tender. Arrange potatoes in 1 1/2 qt. baking dish. Melt butter and add sugar and corn syrup. Pour syrup over potatoes and let stand in refrigerator overnight. Cook slowly at 250-275 degrees F for 2 hours. Cover first hour.
