Today's Recipes


Praline Pumpkin Pie

Ingredients

  • Pastry for 9 inch, 1 crust pie
  • 2 eggs, slightly beaten
  • 1/2 cup granulated sugar
  • 1 can pumpkin
  • 1 can evaporated milk
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/8 tsp. ground cloves
  • 1/3 cup brown sugar
  • 1/3 cup pecans (chopped)
  • 1 Tbsp. margarine or butter (softened)

Directions

Heat oven to 425 degrees F. Prepare pastry. Beat remaining ingredients except brown sugar, pecans and margarine. Pour filling into pie plate. Bake 15 minutes. Reduce oven temperature to 350 degrees F. Bake about 35 minutes longer. Mix brown sugar, pecans and margarine; sprinkle over pie. Bake about 10 minutes or until knife inserted in center comes out clean. Refrigerate about 4 hours or until chilled. Serve with whipped cream or ice cream. Immediately refrigerate any remaining pie.

Pumpkin Cake Delight

Ingredients

  • 1 - 18.25 box of yellow cake mix
  • 1 - 15 oz pumpkin pie filling ready to use
  • 1/2 cup real butter melted

Directions

Pour the pie filling in the bottom of a 9 x 13 inch baking dish. Sprinkle the cake mix over the pie mixture. Pour butter over the cake mix.

Bake at 350 for 30 - 40 min.

Test by using a knife and if it pulls out clean it's done.

Butterfinger Bars

Ingredients

  • 1 cup margarine or butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 4 cups quick oatmeal
  • 3/4 cup peanut butter
  • 1 pkg. chocolate chips

Directions

Cream together margarine and sugars. Add oatmeal; mix thoroughly. Press into a 9x13 inch pan. Bake at 350 degrees F for 12 to 15 minutes. Melt together chips and peanut butter. Spread on top while warm.

White Candy Fantasy Clusters

Ingredients

  • 4 cups rice chex cereal
  • 2 cups pretzel sticks, coarsely broken
  • 1 cup cashew, coarsely chopped
  • 1/2 package (16 0z) vanilla flavored candy coating (almond bark)
  • 1/2 cup semi sweetened chocolate chips, melted

Directions

Spray with cooking spray or lightly grease 13x9 inch pan mix cereal, pretzels and cashews in large bowl, set aside. Melt candy coating in 2 quart saucepan over low heat, stirring occasionally. Pour over cereal mixture until evenly coated. Press in pan.

Drizzle melted chocolate chips over cereal mixture. Let stand about 30 minutes or till chocolate is firm. Break into clusters. Store in airtight container.

Velveeta Hot-N-Cheesy Crab Dip

Ingredients

  • 1 pound velveeta cheese (brick) cut up
  • 1 can (6 1/2 oz) crabmeat, drained, flaked
  • 1/2 cup sliced green onions
  • 1/2 cup red bell peppers
  • 1/2 cup sour cream
  • 1/8 tsp red pepper

Directions

Mix velveeta, crabmeat, onions, peppers in microwave safe large bowl.

Microwave on high about 5 minutes or until cheese is completely melted, stirring after 3 minutes.

Stir in sour cream and red pepper.

Serve with wheat thins, assorted vegetables or tostidas.

Easy Baked Pineapple Chicken

Makes for a tasty pinapple chicken. You can serve it with steamed rice.

Ingredients

  • 1 whole chicken, cut up (or 2 1/2 pounds of chicken pieces)
  • Paprika, garlic and onion powder to taste
  • 2 to 3 tablespoons of soy sauce
  • 1 20 ounce can of pineapple chunks with juice

Preheat oven to 350F. Spray casserole dish with non-stick spray. Put the chicken in the dish and sprinkle with paprika, garlic and onion powder. Separate the pineapple from the pineapple juice. Mix the soy sauce and pineapple juice together and baste the chicken. Then pour the pineapple chucks on top of the chicken. Bake for 1 hour. Keep covered for the first 50 minutes.

Old Fashioned Beef Stew

Here's the recipe from my 1974 Betty Crocker Book which is also falling apart. I love this book.

1/2 C flour
1 tsp salt
1/4 tsp pepper
2 pounds beef stew meat-1 inch pieces
2 T shortening
6 cups hot water
3 pared medium potatoes-1 inch cubes
1 medium turnip-1 inch cubes
4 carrots-1 inch slices
1 green pepper cut into strips
1 cup celery-1 inch pieces
1 medium onion diced (1/2 cup)
1 T salt
2 beef bouillon cubes
1 bay leaf

Mix flour, 1 tsp salt and pepper. Coat meat with flour mix, melt shortening in skillet then brown meat.

Add water to meat and boil, reduce heat, cover and simmer 2 hours. Stir in remaining ingredients and simmer 30 minutes or til veggies are tender.

If you want stew thick, shake 1 cup water and 2-4 T flour in a jar, stir into stew and heat to coil stirring constantly. Serves 6.
