Tea Cake Balls

These remind me of winter and the Holidays because of their snowy coating. I know many people make these with walnuts but I happen to prefer pecans or almonds - in that order ;-)

Ingredients:

  • 1 cup butter, room temp
  • 1 tsp. vanilla extract
  • 6 Tbsp. powdered sugar, plus 1/3 cup for coating
  • 2 cups all purpose flour
  • 1 cup pecans or almonds, chopped

Directions:

Preheat oven to 350 degrees F. Cream the butter and vanilla until smooth in a bowl. Combine the 6 tablespoons of powdered sugar and flour in a medium to large bowl. Stir the butter mixture in to the flour mixture until just blended. Mix in the pecans or almonds.

Roll dough in to 1 inch balls and place them about 2 inches apart on a non greased cookie sheet. Bake for 12 minutes in preheated oven.

Once cooled, roll the balls in to the remaining powdered sugar to coat.
