This is a great Easter brunch dish!
- 1 pie shell (9inch)
- 3 large eggs
- 1 small can evaporated milk
- 1 cup grated cheese
- 3/4 cup cooked shrimp, ham or crab
- 1 green onion, chopped
- 1/4 cup mushrooms
Mix eggs, cheese and milk. Add rest of ingredients; pour into pie shell. Bake at 425 degrees F for 15 minutes, reduce heat to 350 degrees F and bake 10 minutes or until light brown and puffy.
