Chocolate Buttercream Cake

Ingredients:
  • 1 pkg. semi sweet chocolate morsels
  • 1/2 cup half-and-half
  • 1 cup butter or margarine
  • 2 1/2 cup sifted powdered sugar
  • 2 layers Basic Light Cake
  • 1 cup chopped almonds, toasted

Directions:

Combine chocolate morsels, half and half, and butter in a saucepan; cook over medium heat, stirring until melted and smooth. Remove from heat; blend in powdered sugar. Set saucepan in a bowl of ice water; beat at medium speed until frosting holds it's shape. Spread frosting between layers and on top and sides of cake. Comb frosting on top of cake, using a metal icing comb, if desired. Gently pat chopped almonds onto sides of cake. Note: Metal icing combs are available in kitchen specialty shops. You may also use the tines of a fork or a regular wide-toothed hair comb bought just for cake decorating.
