Recipes for Meals to Fix and Freeze I work full time (outside the home) and have four children (7yrs, 5yrs, and the twins are 14 months). What I need (besides in house help) is meals that I can fix and freeze. I found a few sights, but the recipes are a bit bland and or higher $$ cuts of meat. Any help would be a lifesaver! Thanks all! Directions Preheat oven to 400 degrees F. Grease an 8-inch square baking pan. In a large heavy saucepan over low heat, melt 8 tablespoons of butter and chocolate, stirring constantly. Remove from heat and stir in granulated sugar, a teaspoon of vanilla and eggs, one at a time. Blend in flour, and walnuts. Spread in pan and bake until brownies just start to pull from sides of pan, 18 to 20 minutes. To prepare frosting: In a medium bowl with electric mixer, beat remaining butter and vanilla until creamy. At low speed, gradually add confectioners' sugar and cocoa, alternating with milk, beating well after each addition until frosting is smooth and fluffy. Frost brownies when removed from oven by gently spreading on. Cut into 16 squares. By Connie from Cotter, AR Post Feedback: http://www.thriftyfun.com/tf42997757.tip.html

Directions Pre-heat oven to 220 degrees C (430 degrees F or thereabouts). Dice the capsicum. Heat oil in a pan and capsicum, stir for 1-2 minutes. Add aborio rice, stir to coat. Add can of tuna and can of tomatoes - do not drain them. Add the paste and herbs and mix well. Fill the tomato can with water, add and stir. Once the mixture is slightly thick transfer it to a baking dish. Top with grated cheese. Bake in oven for 40-45 minutes, until rice is tender. Serve with a crisp garden salad.
