Ingredients
- 5 Tbsp. butter or margarine
- 3 cups corn flakes, crushed to 1-1/2 cups, divided
- 3 Tbsp. chopped onion
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1-1/4 cups milk (2% ok)
- 1 cup shredded Swiss cheese (4 oz.)
- 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry.
- 2 eggs, well beaten
Directions
Preheat oven to 350 degrees F. In a large pan, melt the butter over low heat. Remove 2 Tbsp. of the melted butter to a large bowl and add 1/4 cup cereal. Mix well, and set aside for the topping. Stir the onion, flour and salt into the butter remaining in the pan. Cook for about 1 minute, stirring constantly. Gradually add the milk, stirring until smooth. Increase the heat to medium and cook until the mixture comes to a boil, stirring constantly. Remove from the heat. Add the cheese, stirring until lightly melted. Stir in the spinach, eggs, and the remaining 3/4 cup cereal. Spread the mixture in a 1 quart casserole dish. Sprinkle the reserved cereal topping over the spinach mixture. Bake for about 25 minutes or until heated through.
