Recipes Using Leftover Ham

Today's Recipes


Spice Cookies

  • 1 cup butter, softened (250 ml)
  • 1 cup granulated sugar (250 ml)
  • 1/2 cup corn syrup (125ml)
  • 2 3/4 cup flour (675 ml)
  • 1 cup unblanched almonds, chopped (250 ml)
  • 1 tbsp cinnamon (15 ml)
  • 2 tsp ground ginger (10 ml)
  • 2 tsp ground cloves (10 ml)
  • 1 tsp baking soda (5 ml)

In large bowl, cream butter & sugar. Add corn syrup.

Combine flour, almonds, cinnamon, ginger, cloves and baking soda. Add butter mixture. Dough should be soft but not sticky. Add more butter if it's too dry.

Divide dough into 4 portions and roll each into a 1 1/2" (4 cm) log. Wrap in plastic wrap and refrigerate until chilled (can be left overnight or frozen for up to a month - thaw before baking).

Cut rolls into 1/4" (5 mm) slices and bake for 8 - 10 minutes @ 400F. Let cool in pan before removing.

Dough can also be rolled out and cut with cookie cutters, then chilled on cookie sheets before baking.

Health Muffins

Ingredients

  • 1 box lite yellow cake mix
  • 1 cup raisins
  • 3 cups oatmeal
  • 1/2 lb. carrots (can substitute 8 oz. dried apricots, washed and thinly sliced)

Directions

Mix cake according to directions on box. As soon as cake is mixed put in oatmeal, raisins, carrots (grate and cook in microwave 1/2 lb.), 1/2 cup water. Mix with spoon only until ingredients are blended. Put into muffin papers in tins and into oven immediately. Bake according to box directions.

Homemade Sour Cream

Try this instead of sour cream on beans, vegetables, fruit, and tortillas.

Ingredients

  • 2 tablespoons skim milk
  • 1 tablespoon lemon juice
  • 1 cup low fat cottage cheese

Directions

1. Place all ingredients in a blender, and combine on medium-high speed until smooth and creamy. Serve with Tropical Fruit Compote (see any recipe that uses sour cream).

Yield: 8 servings--Serving size: 2 1/2 tablespoons

Each serving provides: Calories: 27 Total fat: Less than 1 g Saturated fat: Less than 1 g Cholesterol: 2 mg Sodium: 117 mg Calcium: 24 mg Iron: Less than 1 mg

Date Bread

Ingredients

  • 1 1/2 cups sugar
  • 3 Tbsp. butter (melted)
  • 2 eggs
  • 1 lb. dates
  • 1 1/2 cups hot water
  • 3 cups flour
  • 3 tsp. soda
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1 cup nutmeats (opt.)

Directions

Chop dates and add the 1 1/2 cups hot water poured over. Do this first. Cream sugar and butter. Add eggs and beat. Add cooled date mixture. Sift flour, soda, baking powder, and add vanilla and 1 cup nutmeats. Bake in 2 loaf pans at 350 degrees F for 1 hour.

Earthquake Cake

Ingredients

  • 2/3 cup shredded coconut
  • 2/3 cup pecans-chopped
  • 2/3 cup chocolate chips
  • 1 box german chocolate cake mix
  • 8 oz cream cheese
  • 1 stick butter-softened
  • 1 pound powdered sugar

Directions

Sprinkle coconut, pecans, chocolate chips over the bottom of a greased 9x13 pan.

Prepare the cake following package directions. Then pour batter into prepared pan.

In a small saucepan, melt cream cheese with the butter then stir in powdered sugar. Pour over top of the cake batter, spreading topping a little thicker at the edges. Place in preheated oven 350 degrees f and bake 40-50 minutes.
