Buying and Preparing Exotic Fruit

I love to try new things, but there are many types of fruits in the supermarket that I'm afraid to buy because I don't know if they are ripe or how to eat them. I was staring at a Japanese pair the other day for example. Can people list what they are familiar with and tell me how to pick a "good" one and what to do with it when I get home? I would love to try a prickly pair too, but those thorn things get in my fingers!

Zucchini Casserole

Easy Zucchini Casserole

Ingredients:

  • 1 zucchini
  • 1 onion
  • 1 can cream of mushroom soup
  • 6 slices cheese
  • salt to taste
  • 1 cup buttered bread crumbs

Directions:

Slice squash into butter 1 1/2 qt. baking dish. Add salt. Pour soup over squash. Add diced onion. Sprinkle with bread crumbs and arrange cheese slices over top. Or used crushed potato chips (barbecued) instead of bread crumbs. Bake at 350 degrees F. for 30 minutes.

Moist Chocolate Cake

Ingredients

  • 1 3/4 cups sugar
  • 2 cups flour
  • 1/4 cup cocoa
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs
  • 1 cup brewed coffee
  • 1 cup buttermilk or sour milk
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla

Directions

In a large bowl combine eggs, sugar, oil and vanilla. Stir well. Add flour, soda, baking powder, cocoa and salt. Gradually add coffee and buttermilk or sour milk. Bake at 350 degrees F for approximately 45-50 minutes.

Note: To make sour milk, use 1-2 Tbsp. vinegar to 1 cup milk.

Zesty Fried Green Tomatoes

Ingredients

  • 4 medium green tomatoes, sliced 1/4 inch thick
  • salt
  • 1/2 cup cornmeal
  • 1/2 cup grated Parmesan cheese
  • 3 Tbsp. flour
  • 1/2 tsp. garlic salt
  • 1/2 tsp. oregano
  • 1/2 tsp. ginger
  • dash red pepper
  • 2 eggs

Directions

Sprinkle both sides of tomatoes with salt and let stand 10 minutes. Combine cornmeal, cheese, flour and seasonings. In another bowl place eggs and beat. Pat tomatoes dry. Dip into eggs and coat with dry mixture. Fry in butter until golden brown. Drain on paper towel.

Freezer Bag Omelets

Ingredients

  • 1 quart size freezer zip loc bag
  • 2 eggs
  • your choice of fillings (cooked ham, cooked bacon, onions, peppers, shredded cheese, etc.)
  • Salt and Pepper, to taste with other herbs of your choice
  • 2 teaspoons butter
  • 1 teaspoon evaporated milk (opt.) for a more creamier texture to the omelet.
  • 1 pot of briskly boiling water (preferably in a large stock pot or pasta pot). This pot should hold 6 quart size freezer bags.

Directions

Add ingredients in the freezer zip lock bag, close bag and release air out of bag; "massage" the ingredients until well mixed; drop into the boiling water and boil for 13 minutes only. Remove carefully from water; open bag slowly to release steam; roll omelet out of bag onto a plate.

This is a great recipe for camping or a sleep-over for teenagers. Each person can prepare their own freezer zip lock bag with the omelet ingredients. Adult supervision should be used for removal of the bags from the boiling water.

Super Bowl (World Series) Hot Pizza Dip

Ingredients

  • 1 8 oz. package cream cheese, softened
  • 1 tsp. Italian or pizza seasoning
  • 1 cup shredded mozzarella cheese
  • 3/4 cup grated parmesan cheese
  • 8 oz. can pizza sauce
  • 2 Tlbs. chopped green pepper, optional
  • 2 Tlbs. thinly sliced green onion, optional

Directions

Cream the cream cheese and Italian or pizza seasoning and spread in a microwave safe pan. Combine mozzarella cheese, parmesan cheese, and sprinkle 1/2 of it on top of the cream cheese. Top with pizza sauce and remaining cheese. Add the green pepper, green onion. Microwave on high 3-4 minutes until cheese is somewhat melted. Let stand 2 minutes. Bake in 350 degrees F. for 20 minutes.

Cookie Bar Mix

Present this in a canning jar and it will almost be too pretty for the recipient to eat! Enjoy!

Ingredients:

  • 1/2 cup walnuts or pecans, chopped
  • 6 ounce butterscotch morsels
  • 6 ounce semi-sweet chocolate morsels
  • 1 cup coconut
  • 1 1/2 cups graham cracker crumbs
  • 1 wide-mouth quart size canning jar

Directions:

Layer ingredients in a quart sized canning jar in the following order:

Walnuts or pecans, butterscotch morsels , semisweet chocolate morsels, coconut, graham cracker crumbs. Place lid on jar and cut a piece of fabric large enough to come down over lid and secure with a rubber band. Use pinking shears to cut fabric for a pretty edging.

Attach the directions for baking the bar cookies on pretty paper with the following directions:

Cookie Bar Mix

To make this recipe, you'll also need:

  • 1/2 cup butter or margarine
  • 1 (14 ounce) can sweetened condensed milk

Melt 1/2 cup of butter. Add top layer of graham cracker crumbs. Pat evenly in bottom of an un-greased 13x9x2 inch baking pan. Sprinkle the remaining layered ingredients into the crumb mixture and spread even with spoon. Pour can of sweetened condensed milk evenly over all. Bake at 350 degree F oven for 30 minutes; cool. Cut into bars. Makes about 36 bars.

To attach instructions, punch a hole in the corner of the paper with a punch, then attach with the instructions with a ribbon or twine tied around the lid (hiding the rubber band).

You can also include a wooden spoon with the jar! These are really pretty when done! They make great Christmas gifts or any time of the year gifts. Enjoy!

Pan Gravy

Ingredients

  • 1 cup lard
  • 2 cups flour
  • 3 qt. cold water, divided
  • 1 can cream of mushroom soup
  • 1 soup can milk
  • 1 tsp. Kitchen Bouquet seasoning
  • 1 Tbsp. salt or to taste
  • 1 tsp. black pepper

Directions

In a pan or skillet, add lard and flour. Fry together until brown. Add 1 qt. cold water, mushroom soup and milk. Stir with whip and add 2 more qt. water and seasonings. Heat to desired consistency. Ready to serve.

Zucchini Cookies

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 4 cups flour
  • 2 tsp. soda
  • 1 tsp. cloves or allspice
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 cups chocolate chips
  • 2 cups chopped nuts
  • 2 cups shredded zucchini

Directions

Cream together sugar, butter and eggs until fluffy. Add sifted dry ingredients alternately with zucchini. Add chocolate chips and nuts. Drop by teaspoonful on greased cookie sheet. Bake at 375 degrees F for 12-15 minutes. Do not overbake.

Note: If your zucchini has a dry texture, use less flour. You can also add 4 slightly rounded Tbsp. cocoa and use nutmeg instead of cloves.

French Vanilla Cinnamon Bun Frappe

Ingredients

  • 1 tsp. instant coffee
  • 3 oz. milk
  • 2 oz. water
  • 2 packets Splenda french vanilla flavored blends for coffee
  • 1 packet Splenda (regular)
  • dash of cinnamon
  • splash of non dairy creamer
  • 5-7 ice cubes

Directions

Place all ingredients in blender on high for 45 seconds.

Broccoli Casserole

Recipes for making Broccoli Casserole.

Broccoli Casserole I

Ingredients:

  • 2 eggs beaten
  • 1 cup mayonnaise
  • 1 can cream of mushroom soup
  • 2 pkgs chopped broccoli cooked (Use the frozen broccoli in the small boxes)
  • 1 cup shredded cheddar cheese

Directions:

Mix all of the ingredients and bake for 45 minutes at 375 degrees F.

Our family likes to have this at our Thanksgiving dinner.

Broccoli Casserole II

Ingredients:

  • 2 (10 oz.) boxes chopped broccoli
  • 1 small box Velveeta cheese
  • 1 tube Ritz crackers
  • 1 stick margarine

Directions:

Cook and drain broccoli. Put in 8-inch square pan. Slice cheese and lay on top of broccoli. Crush crackers and put on top. Melt margarine and drizzle on top. Bake at 350 degrees until cheese bubbles.

Broccoli Casserole III

Ingredients:

  • 2 lb. fresh broccoli
  • 1 can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 Tbsp. lemon juice
  • 1 cup crushed cheese-flavored snack crackers

Directions:

Wash and place broccoli in a heavy saucepan. Steam 6-8 minutes until crisp-tender. Place in a casserole dish. In a bowl, combine soup, mayonnaise, cheese and lemon juice. Pour over broccoli. Sprinkle with crushed cracker crumbs. Bake uncovered at 350 degrees F. for 20-30 minutes until heated through.

Fruit Cobbler

Fruit Cobbler I

Ingredients:

  • 1 cup flour
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 2 eggs
  • 1 1/2 tsp. baking powder
  • 1/3 cup butter
  • 1 tsp. vanilla
  • 3-4 cups pie filling (your choice)

Directions:

Beat eggs. Add sugar; beat until creamy. Add butter and beat again. Add rest of ingredients except pie filling. Pour pie filling into 9x13 inch pan. Then put batter on top, dropping with a spoon. Bake at 350 degrees F. for 30-40 minutes or until done.

Fruit Cobbler II

Ingredients:

  • 1 stick of oleo
  • 1 cup milk
  • 1 cup flour
  • 1 can fruit (any)
  • 1 cup sugar

Directions:

In casserole dish melt oleo, mix flour, sugar and milk together. Pour over oleo easily, add fruit to the middle of mixture. DO NOT STIR! Bake at 350º F for 30 min or until brown.

Fruit Cobbler III

  • 1 qt. canned or 1 large jar applesauce, sweetened

Place in glass loaf pan.

Dough mixture

  • 1/2 cup white sugar
  • 1 cup flour
  • 1 tsp. baking powder

Sift these 3 together

Add:

  • 1/2 cup sweet milk
  • 2 Tbsp. melted margarine
  • 1 tsp. vanilla

Drop by spoonfuls on top of fruit. Makes 8 servings. Bake at 325 degrees F until top is golden brown. (Approx. 20-30 minutes.)
