White Beans And Pasta Soup
- 2 cloves garlic
- 2 Tbsp. extra virgin olive oil
- 1 can chopped tomatoes
- dried rosemary, pepper and salt to taste
- 2 cans Great Northern white beans (16oz. size)
- 8 oz. pasta (elbows, shells, or bows)
- 1 cup chicken broth
Saute garlic in oil until brown. Add beans, broth, tomatoes and spices and bring to a boil. Reduce to simmer for 20-30 minutes.
In separate pan, cook pasta according to directions on package. Crush some beans. Add pasta to bean mixture; heat thoroughly and serve.
