I Eat Too Much - Tips for Eating Less

This is a pretty basic request. It may seem silly but I think a lot of people have this problem. I eat way too much. Especially at restaurants. I love Mexican food and with anything I order, the portions are enormous. I eat too much at home as well. I don't eat until I am sick to my stomach, but I know eat more than I need to survive and be healthy and every year I gain a little more weight. Has anyone out there conquered this problem? What are some strategies, tips, or tricks to keep yourself from eating too much?

Eggplant Casserole

Ingredients

  • 1 med. eggplant (peeled and cubed)
  • Salted water
  • 1 stick margarine
  • 1 1/4 cup soft bread crumbs
  • 1/2 tsp. salt
  • 2-3 eggs (beaten)
  • cheese (shredded)
  • cracker crumbs

Directions

Cook eggplant in small amount of salted water until tender; ddrain. Melt margarine in skillet and cook bread crumbs a few minutes. Add salt and cool.. Add beaten eggs and cooked eggplant to crumbs. Pour into a buttered casserole and cover top with shredded cheese. Cover cheese with cracker crumbs. Bake at 375 degrees for 30 to 40 minutes until brown and crusty.

5 Can Casserole

Ingredients

  • 1 can cream of mushroom soup
  • 1 can chicken and rice soup
  • 1 can evaporated milk
  • 1 can chow mein noodles
  • 1 can chicken (can use leftover chicken)

Directions

Mix all together. Bake at 350 degrees for 1 hour.

Pineapple Iced Tea

Ingredients

  • 3 (12oz) cans unsweetened pineapple juice, thawed
  • 1 1/2 cups lemon juice
  • 1 cup sugar
  • 12 cups iced tea

Directions

Mix juice concentrate,lemon juice and sugar in large pitcher, stirring until sugar is dissolved. Add ice tea and mix well. This is cool and refreshing on those hot summer days.

Bacon And Cheese Shells

Ingredients

  • 1 package (12 oz) macaroni and cheese shells
  • 1/4 cup bacon bits
  • 1 small tomato, chopped into small bits

Directions

Prepare mac and cheese as directed. Add bacon bits and tomatoes as well as cheese sauce. Mix well until all ingredients are blended.

Hamburger Rice Casserole

Ingredients

  • 1 1/2 lb. ground beef (brown a little)
  • Onion (diced)
  • 1/2 cup raw rice
  • 1 can chicken noodle soup
  • 1 can cream of mushroom, chicken, or celery soup

Directions

Brown ground beef a little; add some diced onion. Stir in raw rice. Combine all. Pour into greased casserole and bake 1 hour. Use 2 qt. greased casserole. Bake until rice is done in 350 degree oven.

Deluxe Potato Ham Bake

Ingredients:

  • 2 cans cream of mushroom soup (undiluted)
  • 4 Tbsp. butter or margarine
  • 1 cup sour cream
  • 1 med. onion (chopped)
  • 1 1/2 cup Cheddar cheese (shredded)
  • 2 cups fully cooked ham (cubed)
  • 1 bag frozen Southern-style hash brown potatoes (thawed)
Topping:
  • 4 Tbsp. butter or margarine
  • 3/4 cup crushed corn flakes

Directions:

In a large bowl, combine soups, butter, sour cream, cheese and onion; mix well. Stir in ham and potatoes. Spread into a greased 9x13 inch pan. Combine topping ingredients. Sprinkle over casserole. Bake, uncovereed, at 350 degrees for 1 hour or until potatoes are tender. 10-12 servings.
