Recipes for Someone With Colitis Disease

Colitis Disease? A friend came to visit me over the long weekend and informed me that she had Colitis. She could not eat anything with Fibre. We live on fibre. I asked her how she copes? Very difficult as even Doctor cannot help her with recipes and what to avoid, etc. Does anyone know of a site or any delish recipes that I can send her. Thanks!

Blackberry Cobbler

This comes from my friend who lives in Mesa, AZ. Hope you too enjoy this cobbler.

Ingredients

  • 1 Tbsp. granulated sugar
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 cup shortening
  • 1/2 cup buttermilk
  • 1-1/3 cups flour

Directions

Mix sugar, baking powder, salt, shortening, buttermilk and 3/4 cup of the flour to form a sticky dough. Spread remaining flour on a work surface and knead dough until most of the flour is incorporated and dough is manageable. Roll dough to about 1/4-inch thick and cut into large pieces. Cover blackberry filling with dough, overlapping pieces, patchwork style.

Filling Ingredients

  • 1-1/2 pounds blackberries
  • 1-1/3 cups granulated sugar
  • 3-1/2 Tbsp. flour
  • 1-1/3 Tbsp. vanilla extract

Filling Directions

Mix all ingredients and put into prepared pan.

Topping Ingredients

  • 1/2 Tbsp. melted butter or margarine {not spread}
  • 2-1/2 tsp. granulated sugar

Topping Directions

Drizzle melted butter over dough and sprinkle with sugar. Bake until crust is golden-brown and filling is bubbly, about 50 minutes. Makes 8 to 10 servings By Connie from Oden, Arkansas

Bran Muffins

Ingredients

  • 1 1/2 cups whole bran cereal
  • 1/2 cup boiling water
  • 1 1/4 cups flour
  • 3/4 cup sugar or honey
  • 1 1/4 tsp. baking soda
  • 3/4 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1/4 cup raisins

Directions

Stir cereal with water to moisten evenly. Cool. Stir together: flour, sugar, baking soda, cinnamon, salt and set aside. Stir egg, buttermilk, oil and raisins into cereal mix until well blended. Stir in flour mix until well mixed. Fill greased 2 1/2 inch muffin cups 2/3-3/4 full. Bake in 425 degrees F oven for 20 minutes. Can be stored in pitcher in refrigerator for 6 weeks. Pour out and bake as needed.

Old Fashioned Rhubarb Pudding Cake

Ingredients

  • 4 cups diced fresh or frozen rhubarb
  • 1 1/2 cup sugar, divided
  • 1/4 cup shortening
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 cup flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk

Directions

Preheat oven to 350 degrees F. In a large saucepan, combine rhubarb and 1 cup sugar. Cook over medium heat for 12 -15 minutes or until rhubarb is tender. Meanwhile, in a small mixing bowl, cream shortening and remaining sugar; beat in egg and vanilla.combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Beat just until combined.

Pour into a greased 9 inch square baking dish. Pour the rhubarb mixture over the batter.

Bake at 350 for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

Butter Brickle Bread

Ingredients

  • 1 package butter brickle pudding cake mix
  • 1 sm. package instant vanilla pudding mix
  • 1/4 cup oil
  • 4 eggs
  • 1/8 cup poppy seeds
  • 1 cup hot water

Directions

Mix all together. Place in 2 well greased loaf pans. Bake at 300 degrees F for 1 hour or until done.

Apple Cream Squares

Ingredients

  • 2 cups flour
  • 2 cups brown sugar
  • 1/2 cup margarine
  • 1 cup chopped nuts
  • 2 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 cup sour cream
  • 1 tsp. vanilla
  • 1 egg
  • 3 cups chopped apples

Directions

Blend flour, sugar and margarine until crumbly. Stir in nuts. Press 2 3/4 cup of mixture into bottom of greased 9x13 pan. To the rest of crumb mixture, add all other ingredients, except apples and blend well. Stir in chopped apples and spoon mixture evenly over crumb crust. Bake at 350 degrees F for 35-38 minutes. Serve warm with Cool Whip or ice cream. Delicious.

Chicken Gelatin Salad

Ingredients

  • 2 cups diced chicken or turkey
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1/2 cup stuffed olives, sliced
  • 2 eggs, hard boiled & sliced
  • 1 cup mayonnaise
  • 1 envelope Knox gelatin
  • 1/2 cup boiling water
  • 1/2 cup cool water
Topping:
  • 1 package lemon gelatin
  • 1/2 cup orange juice
  • 1 can jellied cranberry sauce

Directions

Combine first 5 ingredients. Add mayonnaise. Dissolve gelatin in 1/2 cup boiling water. Add 1/2 cup cool water. Cool and combine with chicken mixture. Spray 8x12 inch pyrex pan with non-stick spray. Add mixture and allow to set. Topping: Dissolve 1 package lemon gelatin in 3/4 cup boiling water. Add 1/2 cup orange juice. Add 1 can cranberry sauce. Stir to blend. Chill and pour over chicken mixture. Chill overnight. Serve on lettuce leaf.

Simple Shrimp Salad

Ingredients

  • 1 lb. shell macaroni
  • 4 eggs, cooked
  • 1 cucumber
  • 1 tomato
  • 1 onion
  • 1 1/2 cups celery
  • 1 small can shrimp, drained
Dressing:
  • 1 1/2 cups mayonnaise
  • 1 tsp. mustard
  • 2 Tbsp. lemon juice
  • 2 tsp. sugar
  • milk

Directions

Cook the macaroni until done. Cook and cool the eggs. Chop into pieces. Dice the cucumber, tomato, onion and celery. Mix together. Add the drained shrimp. Season with salt and pepper. Mix the dressing ingredients together. Pour over salad. Chill.

Fruit Dessert and Salad

Ingredients

  • 2 cups whipping cream
  • juice of one lemon
  • 1 1/2 cup mini marshmallows
  • 1 can chunk pineapple, drained
  • 1 can fruit cocktail
  • 12 maraschino cherries, cut in half
  • 1 cup flaked coconut

Directions

Do not whip the cream! Add the lemon juice to the cream and stir to blend. The cream will thicken slightly. Add the marshmallows, pineapple, cherries, fruit cocktail and coconut. Blend together and put in dish and refrigerator for 6-12 hours before serving. Spoon salad onto lettuce leaf for serving. Add a red or green maraschino cherry on top for decoration.

Eastern Virginia Ham

Ingredients

  • 1 (10-12lb.) pre-cooked ham
  • 4 cups apple cider
  • 5 1/2 tsp. brown sugar
  • 2 medium onions, chopped
  • 2 dozen cloves
  • 3 Tbsp. flour
  • 1/4 cup lemon juice

Directions

Combine 1 cup boiling water with the cider. Add brown sugar and onions and boil 8 minutes. Remove the rind from the ham. Score the meat and insert the cloves. Put ham in a roasting pan. Strain the boiled mixture and pour over ham. Bake at 325 degrees F for 75 minutes, basting every 20 minutes. When ham is done, pour drippings into frying pan. Brown the flour, stir in the lemon juice. Stir the sauce until thick and smooth.

Tuna Melts

Mix together:

  • 1 Can Tuna, Drained
  • 1/4 C Mayo
  • Chopped Eggs, Or Celery If Desired
Layer On 1 Slice Bread. Add 1 Slice Cheese. Place under broiler until cheese is browned.
