Chestnut Chicken

Fancy enough for a dinner party. This recipe can be prepared on a moment's notice if you just keep the ingredients on hand. My family loves it and guests think I'm a gourmet cook! You can easily add a couple more chicken breasts if you need to stretch it a little.

Ingredients:

  • 1 cup margarine
  • 6 boneless chicken breasts
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can sliced water chestnuts
  • 1/4 tsp. thyme
  • 1/2 cup sherry

Directions:

Brown chicken in margarine and place in a 9x13 inch casserole dish. (I spray the dish with Pam for easy clean-up.) Add soup, thyme, chestnuts and sherry to drippings. Bring to a boil. Pour mixture over chicken.

Bake 1/2 hour in a 350 degree F oven, covered. Remove cover and bake an additional half hour. Serve over rice.

60 Minutes Cooking Time
