Divinity Candy

Ingredients

  • 2 cups white sugar
  • 1/2 cup white corn syrup
  • 1/2 cup water
  • 1/8 tsp. salt
  • 1 cup black walnut meats, chopped
  • 2 egg whites
  • 1 tsp. vanilla
  • 1/2 tsp. black walnut flavoring (opt.)

Directions

Mix sugar, syrup and water, bring to a boil and continue boiling until mixture forms a firm ball when dropped in cold water. While above mixture is cooking, beat egg whites and salt until they form stiff peaks. Pour 1/3 of mixture over beaten egg whites, beating continually. Cook remaining syrup until it spins a thread when dropped from spoon. Pour 1/2 of it over egg and syrup mixture and continue beating. Cook remaining syrup until it starts turning a golden color. Pour over egg mixture and beat with mixer until stiff. Add nuts and flavoring, beat by hand until creamy. Pour into buttered pan and cool.

Woohooo, thanks Robin! My mom used to make this stuff up until her old mixer bit the dust. After that her dear friend (and an angel in every sense of the word) gave us a big plate of it every Christmas. One bite and you'll know why it is called "Divinity"... you'll think you've died and gone to heaven! Aw, I miss this stuff!
