Recipe for Golden Nugget Cookies

In the 1960's I found a recipe on the back of a McCormick spice can and it was for "Golden Nuggets" cookies. I've lost it due to several moves and would dearly love it if someone out there has the recipe, and would send me a copy. I'm 71 years old now and made those cookies as young girl on a wood stove. They were like shortbread, but not quite.

Flavoring Wilton Candy Melts

Low Fat Frozen Treat

Good while dieting.

Ingredients:

  • 1 8oz tub of non fat Cool Whip
  • 2 6 oz cups of flavored non fat yogurt
  • 5 5oz paper cups
  • 5 popsicle sticks

Directions:

Fold flavored yogurt into cool whip. Spoon into paper cups. Stand popsicle stick in the center, put into freezer for about 3 hours till frozen. I sometimes cut a banana,put stick into center of banana and spoon the mixture into the cup. Can also use sliced strawberries,and other fruit.

So refreshing and it satisfies my sweet tooth with very little calories.

Vietnamese Noodle Soup

Spicy, low fat soup. My husband and I had wonderful soup at a local Vietnamese restaurant and I tried to duplicate it at home. It's not exactly the same, but pretty close!

Ingredients:

  • 5 cans (14 oz) vegetable stock
  • 2 Tbsp. garlic chili sauce* (Tuong ot toi veit-nam)
  • 1 Tbsp. Sriracha hot chili sauce* (Tuong ot sriracha)
  • 1 bunch of scallions, chopped
  • 1 bunch of fresh cilantro, chopped
  • 8 oz of stir fry vegetables**
  • 1/2 package of plain Chinese noodles (broken into smaller pieces)
  • dash of lemon juice
  • 1 8 oz container of bean sprouts
*These are distributed by Huy Fong Foods, Inc and can be found in the Asian or Ethnic section of most grocery stores.

**I use Marjon fresh stir fry vegetables in a bag - the veggies are napa cabbage, Chinese cabbage, cabbage, carrots, red cabbage, bok choy, onions, savoy, broccoli and snow peas

Directions:

Pour the stock into a large pan. Add the garlic chili sauce and hot chili sauce. Add 3/4 of the scallions and 3/4 of the cilantro. Turn the heat on low and cook for about 20 minutes. Add the vegetables and cook for 10 minutes.

Add the Chinese noodles, a dash of lemon juice and 3/4 of the bean sprouts and cook for 5-10 minutes.

Serve the soup and put the remaining scallions, cilantro and bean sprouts on the side adding as you like.

I usually also make vegetable egg rolls or spring rolls to go with the soup.

Peanut Butter And Banana Wraps

This is a fun treat. ;-)

Ingredients:

  • 4 medium flour tortillas
  • 1/2 cup peanut butter
  • 2 small bananas, thinly sliced
  • ice cream syrup flavor of choice

Directions:

Spread peanut butter on to tortillas, place bananas on peanut butter, drizzle ice cream syrup on bananas and peanut butter. Roll up tortillas and slice in to bite size pieces if desired.

Breakfast Sausage Patties

Have you made sausages with a food processor? I made some chicken and pork sausages. I used half chicken and half pork. Cut meat off bones into small pieces about 1 inch square, put 1/2 cup water on biscuits to make them soft. Mash them up with hands or potato masher. Put all in a large bowl. Sprinkle the seasoning over it.

Put a 1/2 cup at a time in the processor. Pulse it until ground fine as sausage meat. Empty it in another large bowl. Keep doing this till you have ground all the meat. Mix well. Make one patty and fry it then taste it to see if it's like you like it,if not add more seasoning.

Ingredients

  • 1-lb. ground pork
  • 1 lb. ground chicken
  • 4 tsp. ground sage
  • 2 tsp. salt
  • 2 tsp. freshly ground black pepper
  • 3 cold biscuits
  • 1/2 cup water

Directions

Combine all, wet hands to keep the meat from sticking to hands. Form into 1/4 inch thick patties. Fry in a large skillet over medium high heat for 3 minutes on each side, or until done. Will make 10-12 patties that are round and thick.

You can freeze the meat as is or make into patties and freeze,put wax paper in between each patty. I use ziplock freezer bags.

Robin's Recipe Corner:

Fresh Blackberry Pie

Ingredients

  • 2 1/2 Tbsp. cornstarch
  • 1 cup sugar
  • 4 cups fresh blackberries
  • double crust pastry

Directions

Mix cornstarch and sugar; toss with washed and drained berries. Turn into pastry lined pie plate. Cover pie with pastry; seal and flute edge. Cut several slits in top crust to permit escape of steam. Sprinkle top crust with cinnamon and sugar (not too much). Bake in 425 degrees F. for 35-40 minutes or until browned. Makes 1 pie.

Barbecue Sloppy Joes

Ingredients

  • 2 lb. hamburger
  • 1 lg. onion
  • 1/2 cup ketchup
  • 1 can tomato soup
  • 1/4 cup vinegar
  • 2 Tbsp. mustard
  • 1/4 cup brown sugar
  • 1 tsp. salt

Directions

Brown hamburger and onion. Add the rest of the ingredients and simmer for 15-30 minutes. Serve on buns.

Do-Ahead Dried Beef Casserole

Ingredients

  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup Velveeta cheese, cut fine
  • 3 Tbsp. finely chopped onion
  • 1 cup uncooked elbow macaroni
  • 1/4 lb. dried beef (cut in bite-size)
  • 2 hard-cooked eggs, sliced

Directions

Stir soup until creamy, add milk cheese, onion, macaroni, and dried beef. Fold in sliced eggs; turn into a buttered casserole dish. Refrigerate for 3-4 hours or overnight. Bake, uncovered, at 350 degrees F for 1 hour.

Potato Salad

Ingredients:

  • 7 medium - large potatoes, boiled and peeled, salt to taste
  • 7 hard boiled eggs
  • 1 tsp. instant onion
  • 2/3 cup sweet relish
  • 1 1/4 cup Miracle Whip
  • 2 Tbsp. sugar
  • 3 strips bacon, fried crisp, and diced

Directions:

Mix all ingredients together and keep refrigerated.

Hot Chicken Sandwiches

Ingredients

  • 1 1/2 cups cut up cooked chicken
  • 1 1/2 cups cubed cheese
  • 4 hard boiled eggs, chopped
  • 3 Tbsp. sweet pickle relish (or dill, which is what I prefer)
  • 3 Tbsp. chopped onion
  • 3/4 cup mayonnaise
  • 12 buns

Directions

Mix all ingredients and put in 12 buns. Wrap in foil and bake at 350 degrees F for 10-15 minutes. These may also be frozen and then heated at 350 degrees F, about 30 minutes.
