Have your wedding on a Sunday afternoon or even on a weeknight.
The demand is way less for these days and you can get better rates and deals. I personally love Sunday weddings in the middle of the afternoons. It seems like there is always more attendance, too.

We were married in a church on a Friday night at 6:00. The reception was from 7:00 to 11:00. Young children weren't invited due to the time. Plus the fact, we both had large families and couldn't afford it. My husband and I paid for our own wedding. Everyone loved it. One of my uncles, who was known to find fault with everything, said it was the best time he ever had -- it was a Friday night out for the adults.

Good Idea. Valentine's Day 1995 was a Tues and
we did it outdoors (CA) and a lot of people called
and said on a Tuesday??? I said yes and it was
great afternoon those who were important to me
were there.
