Chicken and Veggie Casserole
This is the BEST casserole I've ever had.
- 2 cooked chicken breasts, or 1/2 chicken torn or cut into bite size pieces
- 1 bag frozen broccoli (or any fresh or frozen veggies you like)
- 1 cup mayonnaise
- 1 can condensed cream of chicken soup
- 1 can condensed cream of mushroom soup
- 1 lb. shredded cheddar cheese
Preheat oven to 350 degrees F. In large casserole dish or dutch oven spray with non-stick cooking spray. Layer all the chicken on the bottom. Add frozen broccoli. Spread mayonnaise over the top of broccoli. Spread 1 can of condensed cream of chicken soup and then spread on top of that the other can of condensed cream of mushroom soup. Top with shredded cheddar cheese. Bake 45 minutes or until heated through.

I have a similar recipe that starts with a layer of frozen pierogies on the bottom. NOW its the best casserole you ever had! LOL. Great for a mid-winter comfort meal.
